Description

These baked stuffed loin pockets are a simple and tasty main course, perfect for a family dinner or Sunday lunch. The tender and succulent meat goes perfectly with the savory filling made with cheese, breadcrumbs, parmesan, garlic and parsley. The preparation is quick and easy for everyone, also ideal for those who do not have much experience in the kitchen. I often prepare them when I have unexpected guests and want to make a good impression without spending hours in the kitchen. A tip? Accompany them with a side of baked potatoes or a mixed salad for a complete and balanced meal.

Ingredients (8 ingredients)

  • Loin
  • Cheese
  • 50 g Breadcrumbs
  • 30 g Grated Parmesan cheese
  • 1 clove Garlic
  • 1 bunch Parsley
  • Extra virgin olive oil (EVO)
  • Salt

Preparation of the aromatic mixture

Divide a clove of garlic in half, remove the green sprout and insert it into the bowl together with a bunch of fresh parsley. Chop finely for 3 Sec./Speed 8.

Preparation of the breading

Add 50g of breadcrumbs and 30g of grated Parmesan cheese to the mixture in the bowl. Mix well for 10 Sec./Speed 3.

Assembly of the pockets

Take the loin slices and place a part of cheese on one slice (about 20g per slice). Cover with a second slice of loin. Continue in this way until the slices and cheese are finished.

Breading of the pockets

Grease one side of the stuffed slices with extra virgin olive oil and pass it into the prepared breading, pressing lightly to make it adhere well. Prepare a baking sheet with a sheet of baking paper, grease it lightly and arrange the slices, placing them on the already breaded side.

Completion of the breading

Brush the unbreaded side of the slices with extra virgin olive oil and distribute the remaining breading evenly. Apply a slight pressure on the breading to make it adhere well to the meat.

Oven cooking

Bake the baking sheet with the stuffed slices in a preheated oven at 190°C for 15 minutes. After the set time, turn on the grill and raise the temperature to 220°C and continue cooking for another 5 minutes.
