Description

This shiny chocolate glaze is a real touch of class for any dessert! I often prepare it for birthdays or special occasions, because it is really simple and quick to make with the Thermomix®. High-quality dark chocolate is the key to an intense flavor and perfect shine. The addition of glucose (or acacia honey) and butter gives the glaze a smooth and silky texture. Perfect for covering cakes, profiteroles or any other dessert you want to make special. A tip? Prepare it shortly before using it for optimal shine!

Ingredients (5 ingredients)

  • 200 ml Cream
  • 200 g Dark chocolate
  • 20 g Butter
  • 50 g Glucose
  • 75 g Acacia honey

Preparation (4 steps)

Dark chocolate

Thermomix® Setting
3 min/122°F/Speed 2 50

Finely chop the dark chocolate and put it in the bowl. Melt the chocolate for 3 Min./50°C/Stufe 2.

Cream

Thermomix® Setting
3 min/194°F/Speed 1 90

Pour the cream into a saucepan and heat it on the stove until it is hot, but without letting it boil. Alternatively, heat the cream in the bowl for 3 Min./90°C/Stufe 1.

Glaze

Thermomix® Setting
30 sec/Speed 4

Pour the hot cream into the bowl with the melted chocolate. Add the glucose (or acacia honey) and butter. Emulsify everything for 30 Sek./Stufe 4.

Refine

Thermomix® Setting
10 sec/Speed 8

For an even smoother glaze, blend for another 10 Sek./Stufe 8.
