Description

This chicken and red bean rice salad is a complete and refreshing dish, perfect for summer lunches or picnics. I often prepare it for family meals because it is easy to make and everyone likes it. The rice, combined with tender chicken and red beans, offers a pleasant texture and a savory taste. The lemon mayonnaise brings a touch of freshness that enhances the whole. Feel free to add other vegetables such as diced peppers or cucumbers for an even more colorful and nutritious salad. A real treat, ready in no time!

Ingredients (10 ingredients)

  • 200 g Rice
  • 1 can Red bean(s) (drained) in can(s)
  • 350 g Cooked chicken breast(s)
  • 1 piece Onion(s)
  • 3 c. à soupe Mayonnaise
  • 1 c. à soupe Lemon juice
  • 0.5 bunch Parsley
  • Water
  • Salt
  • Pepper

Cooking the rice and red beans

Thermomix® Setting
Varoma/20 min/Speed 4 Varoma

Pour 1 liter of salted water into the Thermomix bowl. Add 200 g of rice and 1 can of drained red beans to the simmering basket. Insert the basket into the bowl and cook according to the instructions on the rice packaging. Once cooked, remove the basket and let the rice and red beans cool completely.

Preparing the onion and chicken

Peel 1 onion and cut it into four. Put the onion pieces in the Thermomix bowl and chop finely for 3 Sek./Stufe 5. Remove the chopped onion and set aside. Cut 350 g of cooked chicken breasts into small pieces and set aside.

Preparing the sauce

Clean and chop 0.5 bunch of parsley. In a container, mix 3 tbsp of mayonnaise, 1 tbsp of lemon juice, salt and pepper. Dilute with a little water, mixing well.

Assembling the salad

In a large salad bowl, mix the cooled rice and red beans, chopped onion, chicken pieces and chopped parsley. Pour the mayonnaise sauce over the salad and stir gently to coat all the ingredients well. Keep the rice salad cool until serving.
