Description

This gratin caramelized onion soup is a true comfort food, perfect for autumn or winter evenings. The sweetness of the caramelized onions, the rich chicken broth and the melted cheese create an irresistible harmony of flavors. Preparation takes a bit of time, but the result is a delicious and satisfying soup. I often prepare it when I have guests for dinner, because it is a dish that can be prepared in advance and au gratin at the time. A tip? Serve it with homemade bread croutons for an extra rustic touch!

Ingredients (15 ingredients)

  • 1 piece Chicken
  • 1 piece Onion
  • 1 piece Leek
  • 1 piece Carrots
  • 2 foglie Bay leaves
  • 1500 ml Water
  • 1 pinch Coarse salt
  • 800 g Onions
  • 50 g Butter
  • 2 tbsp Extra virgin olive oil (EVO)
  • 100 ml Dry white wine
  • 1 tbsp Sugar
  • 1 pinch Salt
  • 4 slice Stale bread
  • 150 g Gruyere

Preparation (8 steps)

Preparation of the chicken broth

Prepare a chicken broth with chicken, onion, leek, carrots, bay leaves, water and coarse salt. Cook for at least 2 hours. Filter the broth and set aside. (This step is not performed in the Thermomix, but is essential for the flavor of the soup).

Slice the onions

Finely slice the onions. Insert 800g of onions into the bowl and chop: 3 Sec./Stufe 5.

Sauté the onions

Add 50g of butter and 2 tablespoons of extra virgin olive oil to the bowl. Cook: 15 Min./120°C/Stufe 1.

Caramelize the onions

Add 1 pinch of salt and 1 tablespoon of sugar to the bowl. Cook: 5 Min./120°C/Stufe 1.

Deglaze with the white wine

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Add 100ml of dry white wine to the bowl. Cook: 3 Min./Varoma/Stufe 1, without the measuring cup, to evaporate the alcohol.

Cook the soup

Add 1 liter of hot chicken broth to the bowl. Cook: 120 Min./95°C/Stufe 1.

Thicken the soup (if necessary)

If the soup is too liquid, cook for another 10 Min./Varoma/Stufe 1, without the measuring cup, to thicken.

Gratin the soup

Preheat the oven grill to maximum. Pour the hot soup into individual ramekins. Place one or two slices of stale bread over each ramekin and cover with plenty of grated cheese. Bake the ramekins in the upper part of the oven for a few minutes, just long enough for the cheese to melt and form a golden and irresistible crust. (This step is not performed in the Thermomix).
