Description

These gratinated anchovies are a tasty and quick appetizer to prepare, perfect for a summer dinner or a light lunch. The scent of lime gives a touch of freshness that perfectly matches the intense flavor of the anchovies and the crunchiness of the breadcrumbs. I often prepare them when I have unexpected guests, because they are always a success! The preparation is simple and quick, and the result is a tasty and inviting dish. An excellent alternative to enjoy blue fish in a different way than usual.

Ingredients (9 ingredients)

  • 20 piece Fresh anchovies
  • 50 g Grated Parmesan cheese
  • 100 g Stale bread
  • 1 tbsp White wine
  • 1 bunch Parsley
  • 1 clove Garlic
  • 50 ml Extra virgin olive oil
  • 1 pinch Salt
  • 0.5 piece Lime (juice)

Preparation (7 steps)

Preparation of the bread

Put the stale bread to soak in cold water to soften it. Once softened, squeeze it well.

Preparation of the breading mixture

In the Thermomix bowl, insert the squeezed bread, grated Parmesan cheese, garlic clove and parsley. Chop for 5 Sec./Level 5.

Addition of white wine

Thermomix® Setting
10 sec/Speed 3

Add a tablespoon of white wine to the mixture in the bowl and mix for 10 Sec./Level 3.

Preparation of the anchovies

Arrange the opened anchovies on a sheet of baking paper in a baking tray and brush them evenly with extra virgin olive oil.

Covering the anchovies

Cover the anchovies one by one with the mixture based on soaked bread, forming a sort of meatball.

Final brushing

Reposition the anchovies on the baking tray and brush them again on both sides with extra virgin olive oil.

Gratinating in the oven

Heat the oven to 190°C and bake the gratinated anchovies for 15 minutes. Then, turn on the grill and let them go for another 3 minutes.
