Description

These green pasta with seasonal vegetables are a simple and tasty dish, perfect for a quick lunch or a light dinner. I love using whole wheat pasta for an extra dose of fiber and a richer taste. The fresh basil pesto brings an incomparable touch of freshness, while the green beans and potatoes add texture and consistency.   • 3 bunch basil
  • 5 c a s extra virgin olive oil
  • Salt
  • 1 c a s pine nuts
  • 2 clove garlic
  • 100 g green beans
  • 400 g whole wheat pasta
  • 100 g potatoes

Preparation of the potatoes

Thermomix® Setting
20 min/212°F/Speed 1 100

Peel, wash and cut the potatoes into pieces. Place them in the Thermomix cooking basket. Fill the bowl with 1 liter of water. Cook the potatoes for 20 Min./100°C/Stufe 1.

Preparation of the green beans

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Top and wash the green beans. Place them in the Varoma. Empty the water from the bowl and add 500 ml of water. Place the Varoma on the bowl and cook the green beans for 15 Min./Varoma/Stufe 1.

Cooking the pasta

Thermomix® Setting
10 min/212°F/Speed 1 100

Empty the water from the bowl. Fill the bowl with 1.5 liters of water and add salt. Bring the water to a boil for 10 Min./100°C/Stufe 1. Then add the 400g of whole wheat pasta and cook according to the instructions on the package, usually about 10 Min./100°C/Stufe 1.

Preparation of the pesto

5 sec/Speed 8

While the pasta is cooking, prepare the pesto. Put the 2 cloves of garlic and the 1 tbsp of pine nuts in the Thermomix bowl. Mix for 5 Sek./Stufe 8.

Adding basil and oil

Thermomix® Setting
5 sec/Speed 5

Add the 3 bunches of basil and 1 good pinch of salt to the bowl. Mix for 10 Sek./Stufe 7. Then add the 5 tbsp of extra virgin olive oil and mix for 5 Sek./Stufe 5.

Final mix

Drain the pasta, potatoes and green beans. Pour the pasta, potatoes and green beans into a salad bowl. Add the pesto and mix gently. Serve immediately.
