Description

This creamy amaranth breakfast porridge is a wonderful start to the day! I especially like to make it in the autumn when the apples are fresh from the tree. The amaranth is cooked with oat milk and the apples give it a fruity note. Topped with crunchy walnuts and slightly sour cranberries, it is not only delicious but also a real eye-catcher. The recipe is super easy and quick to prepare, perfect for a healthy and satisfying breakfast or as a sweet snack. If you like, you can add some cinnamon or maple syrup.

Ingredients (5 ingredients)

  • 200 g Amaranth
  • 400 ml Oat milk
  • 2 piece Apples
  • 50 g Walnuts
  • 50 g Dried cranberries

Preparation (9 steps)

Rinse amaranth

Place 200 g amaranth in a sieve and rinse under running water until the water runs clear. This removes bitter substances.

Add amaranth and oat milk to the mixing bowl

Add rinsed amaranth and 400 ml oat milk to the mixing bowl.

Cook amaranth

20 min/212°F/Gentle stir speed 100

Close the mixing bowl and cook for 20 min./100°C/gentle stir setting. If necessary, use the spatula to push it away from the edge during the cooking process.

Prepare apples

Wash, core and dice 2 apples.

Add apples

5 min/212°F/Gentle stir speed 100

Add apple cubes to the mixing bowl and cook for another 5 min./100°C/gentle stir setting.

Let the porridge steep

Let the amaranth porridge steep in the mixing bowl for 5 minutes.

Chop walnuts

Thermomix® Setting
3 sec/Speed 5

Add 50 g walnuts to the mixing bowl and chop for 3 sec./speed 5. Transfer.

Chop cranberries

Thermomix® Setting
3 sec/Speed 5

Add 50 g dried cranberries to the mixing bowl and chop for 3 sec./speed 5. Transfer.

Arrange

Divide the amaranth porridge into 4 bowls and sprinkle with the chopped walnuts and cranberries.
