Description

This almond-orange Bundt cake, prepared in the Thermomix®, is a juicy cake with almonds, orange and cinnamon.   • 1 Orange
  • 100 g Almonds ground
  • 100 g Flour
  • 75 g Sugar
  • 50 g Chopped almonds
  • 2 tsp Baking powder
  • 1 tsp Cinnamon
  • 1 pinch Salt
  • 100 ml Soy milk
  • 10 Tropfen Bitter almond Flavor

Preparation (7 steps)

Prepare orange

Wash one orange with hot water and dry. Grate the zest and set aside 1 teaspoon of orange zest. Squeeze the juice and measure out 50 ml.

Melt margarine

Put 50 g margarine in the mixing bowl and melt for 3 min./50°C/speed 1.

Mix dry ingredients

Put 100 g ground almonds, 100 g flour, 75 g sugar, 50 g chopped almonds, 2 tsp baking powder, 1 tsp cinnamon, 1 tsp orange zest and 1 pinch of salt in the mixing bowl and mix for 10 sec./speed 3.

Add and mix liquid ingredients

Add the melted margarine, 100 ml soy milk, 10 drops of bitter almond flavor and 50 ml of the squeezed orange juice to the dry ingredients in the mixing bowl and stir for 20 sec./speed 3. Use the spatula to push down from the edge and stir for another 10 sec./speed 3.

Fill dough into molds

Fill the dough into greased mini Bundt cake molds (or muffin molds).

Baking

Place the filled molds in the preheated oven at 170 °C circulating air (190 °C top/bottom heat) and bake for approx. 20 minutes. Do a stick test.

Cool and Serve

Let the mini Bundt cakes cool down in the mold, carefully remove them from the mold and decorate as desired or serve sprinkled with powdered sugar.

The combination of almonds and orange reminds me of Christmas and the warmth you seek at this time of year. I have slightly adapted her recipe and used the Thermomix® to simplify the preparation and optimize the consistency. The ingredients all play an important role in the taste and texture of the cake. The ground almonds provide a moist and nutty base, while the chopped almonds provide a pleasant bite. The orange brings a fruity freshness and a slightly sour note that harmonizes perfectly with the sweetness of the sugar. Cinnamon and bitter almond flavor round off the taste profile and give the cake a Christmas spice. The soy milk provides the necessary moisture and makes the cake juicy without making it too heavy. When preparing it in the Thermomix®, it is important not to melt the margarine too hot, as it can splash otherwise. Make sure that the dry ingredients are well mixed before adding the liquid ingredients. This prevents lumps from forming. After mixing the liquid and dry ingredients, you should use the spatula to push the dough down from the edge to ensure that all ingredients are evenly mixed. The baking time may vary depending on the oven, so it is important to do a toothpick test to make sure the cake is cooked through. For a vegan version, you can replace the margarine with vegan butter and the soy milk with another plant-based milk of your choice. Instead of cinnamon, you can also use other spices such as cardamom or nutmeg. If you don't like bitter almond, you can omit the flavor or replace it with vanilla extract. The almond-orange Bundt cake tastes best on its own, but it also goes well with a cup of coffee or tea. You can sprinkle it with powdered sugar or cover it with icing.
