Description

This creamy chicken stew with mushrooms is a recipe that I often prepare at home. It is comforting, tasty and perfect for a quick weekday meal. The combination of tender chicken with the creamy sauce and mushrooms is simply delicious. I use chicken thighs and drumsticks to make it more juicy. It is prepared in a short time with the Thermomix®, which makes it an ideal dish for those days when you don't have much time to cook. You can serve it with white rice or steamed potatoes for a complete meal. I hope you enjoy it as much as we do!

Ingredients (14 ingredients)

  • 1 piece Whole chicken (without breasts or carcasses)
  • 1 piece Leek
  • 4 clove Garlic
  • 250 g Mushrooms
  • 150 ml Crème fraîche or thick cream
  • 1 rama Fresh rosemary
  • 200 ml Dry sherry or manzanilla
  • 200 ml Chicken broth
  • Lemon or lime for grating the skin
  • to taste Salt
  • to taste Ground black pepper
  • Fresh parsley
  • 2 tbsp Butter
  • 2 tbsp Extra virgin olive oil

Preparation (8 steps)

Preparation of leek and garlic

Thermomix® Setting
5 Seg./Speed 5

Cut the leek into pieces and the garlic cloves in half. Place in the Thermomix bowl and crush for 5 Sec./Stufe 5.

Leek and garlic stir-fry

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 2 tbsp of extra virgin olive oil and 2 tbsp of butter to the bowl. Program 5 Min./120°C/Stufe 1.

Add the mushrooms

Thermomix® Setting
5 min/248°F/Speed 1 120

Wash and slice the mushrooms. Add them to the bowl and program 5 Min./120°C/Stufe 1.

Brown the chicken

In a separate pan, brown the previously salted and peppered chicken thighs, drumsticks and wings. Reserve.

Incorporate the chicken and wine

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Add the browned chicken to the Thermomix bowl. Pour in the dry sherry or manzanilla. Program 5 Min./Varoma/Stufe 1, without the beaker so that the alcohol evaporates.

Add the broth and rosemary

20 min/212°F/Speed 1 100

Add the chicken broth and the fresh rosemary sprig. Program 20 Min./100°C/Stufe 1.

Incorporate the cream

Thermomix® Setting
5 min/194°F/Speed 1 90

Add the crème fraîche or thick cream, lemon or lime zest, salt and ground black pepper to taste. Program 5 Min./90°C/Stufe 1.

Serve hot, sprinkle with chopped fresh parsley.
