Description

This wild boar goulash is a hearty main course, ideal for the autumn and winter season. The meat is first fried in the pan and then braised in the Thermomix® with vegetables, red wine and spices. The preparation time is about 2.5 hours and yields 6 servings. Perfect for festive occasions or a cozy dinner.

Ingredients (19 ingredients)

  • 500 g Wild boar goulash
  • 250 g Onions
  • 150 g Celery
  • 150 g Carrots
  • 40 g Clarified butter
  • 20 g Tomato paste
  • 250 ml Red wine
  • 500 ml Game stock
  • 1 Stück Bay leaf
  • 5 Stück Juniper berries
  • 5 Stück Peppercorns
  • 1 TL Mustard
  • 1 TL Marjoram
  • 1 TL Thyme
  • 1 TL Rosemary
  • 10 g Cornstarch
  • 20 ml Cream
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (8 steps)

Chop onions

Add 250g onions to the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 40g clarified butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop celery and carrots

Thermomix® Setting
5 sec/Speed 5

Add 150g celery and 150g carrots in coarse pieces to the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula and repeat the process.

Roast tomato paste

Thermomix® Setting
3 min/248°F/Speed 1 248°F

Add 20g tomato paste and roast with the remaining ingredients in the mixing bowl for 3 min./120°C/speed 1.

Deglaze with red wine

Thermomix® Setting
1 min/212°F/Speed 1 212°F

Add 250ml red wine to the mixing bowl and let it reduce for 1 min./100°C/speed 1 without the measuring cup.

Sear meat

Sear 500g wild boar goulash in a separate pan with a little oil and then add to the mixing bowl.

Add remaining ingredients and simmer

Add 500ml game stock, 1 bay leaf, 5 juniper berries, 5 peppercorns, 1 tsp mustard, 1 tsp marjoram, 1 tsp thyme, 1 tsp rosemary and 10g cornstarch to the mixing bowl and simmer for 90 min./95°C/speed 1 reverse rotation. Leave the measuring cup on.

Season and refine

After the cooking time has ended, season the goulash with salt and pepper and refine with some cream if necessary. Add 20ml cream to the mixing bowl and stir in for 1 min./90°C/speed 1 reverse rotation.
