Description

This game mince tomato herb soup is a real centerpiece for cold days! I especially like to make it in autumn when the game meat is nice and aromatic. The fresh herbs give the soup a great note and the red wine provides a pleasant depth. With a dab of cream and fresh mozzarella, it becomes really delicious. The preparation takes a while, but the effort is definitely worth it! A hearty dish that the whole family will love.

Ingredients (11 ingredients)

  • 400 Gramm Deer mince
  • 800 Gramm Tomatoes
  • 2 x Carrots
  • 1 x Onion
  • 1 Bündel Fresh herbs, oregano, thyme, rosemary
  • 1 Schuss Sunflower oil
  • 100 Milliliter Red wine
  • 250 Milliliter Game stock
  • 100 Milliliter Cream
  • 1 Packung Mozzarella
  • 1 x Salt, pepper and sugar

Preparation (9 steps)

Prepare carrots and onions

Peel 2 carrots and cut into coarse pieces. Quarter 1 onion. Put both in the mixing bowl and chop for 5 sec./speed 5. Push down with the spatula.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 dash of sunflower oil and sauté for 3 min./120°C/speed 1.

Remove vegetables

Remove the sautéed vegetables from the mixing bowl and set aside.

Brown game mince

Brown 400g deer mince in a pan with some sunflower oil over high heat until it has taken on color. Season with salt, pepper and some sugar.

Mix game mince and vegetables

Add the browned game mince to the vegetables in the mixing bowl. Deglaze with 100ml red wine and bring to a boil briefly.

Add tomatoes and game stock

Cut 800g tomatoes into pieces and add to the mixing bowl together with 250ml game stock. Mix everything well together.

Add herbs and simmer

90 min/212°F/Speed 1/Linkslauf 100 Reverse

Tie 1 bunch of fresh herbs (oregano, thyme, rosemary) together and place in the mixing bowl. Simmer for 90 min./100°C/speed 1/Reverse.

Refine soup

Thermomix® Setting
10 sec/Speed 2

Remove herbs. If desired, let it reduce somewhat for 10 min./Varoma/speed 1 without measuring cup. Season with salt and pepper and add 100ml cream. Stir for 10 sec./speed 2.

Serve

Arrange the soup on plates and garnish with fresh oregano and plucked mozzarella.
