Description

These savory liver cheese bites are a real eye-catcher at any party! I like to make them again and again because they are so easy to prepare and taste super delicious. The creamy egg dip goes perfectly with the spicy liver cheese and the crispy farmhouse bread. The combination of warm and cold is simply unbeatable. Ideal as finger food for birthdays, barbecues or just as a snack in between. If you like, you can add some chives to the egg cream - this gives the whole thing a fresh touch. Have fun trying it out!

Ingredients (10 ingredients)

  • 16 piece Eggs (Size M)
  • 250 g Farmhouse bread
  • 800 g Liver cheese
  • 2 tbsp Butter
  • 2 tbsp Oil
  • 1 bunch Parsley
  • 200 g Salad mayonnaise
  • 200 g Sour cream
  • Salt
  • Pepper

Preparation (8 steps)

Cook eggs

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Place 16 eggs (size M) in the steaming basket and cover with water. Cook for 25 min./Varoma/speed 1. Then quench the eggs, peel and let them cool down.

Prepare bread

Cut 4 slices (approx. 250 g) of farmhouse bread into 4–5 pieces each.

Prepare liver cheese

First cut 800 g of liver cheese into thick slices, then into approx. 20 pieces.

Chop parsley

Thermomix® Setting

Wash 1 bunch of parsley, shake dry and place in the mixing bowl. Chop for 5 sec./speed 5. Set aside some parsley for garnish.

Prepare egg cream

Thermomix® Setting
10 sec/Speed 3

Place the cooked eggs in the mixing bowl and chop for 5 sec./speed 4. Use a spatula to push down. Add 200 g salad mayonnaise, 200 g sour cream, salt and pepper and stir for 10 sec./speed 3. Season the egg cream with salt and pepper.

Roast bread

Heat 2-3 tbsp butter in a large pan. Roast the bread in it from each side until golden brown.

Fry liver cheese

Heat 2-3 tbsp oil in a large pan. Fry the liver cheese in the hot oil from each side until golden brown.

Arrange skewers

Spread bread pieces with some egg cream. Stick liver cheese on it and sprinkle with remaining parsley. Serve remaining egg cream with it.

These liver cheese bites are an absolute hit with our family, especially at birthdays and barbecues. I still remember well how my grandma always prepared them. She didn't have a Thermomix®, but the principle was the same: simple ingredients that fit together perfectly and create a dish that simply makes you happy. The liver cheese is of course the star of the dish. I prefer a slightly stronger version from the butcher I trust. The taste should be spicy, but not too spicy, so that it doesn't compete with the egg cream. The farmhouse bread provides the necessary bite and rustic note. It shouldn't be too soft so that it can absorb the egg cream well without becoming soggy. The egg cream itself is the connecting element. The mayonnaise provides the creaminess, the sour cream provides a slightly acidic freshness that wonderfully balances the liver cheese. The parsley brings a fresh, green note into play. When preparing it in the Thermomix®, it is important not to cook the eggs for too long, otherwise they will turn greenish. 25 minutes in the Varoma are ideal. After quenching, they are easier to peel. When chopping the parsley, make sure that it does not become too fine, otherwise it will become mushy. It is better to mix it briefly and vigorously. The egg cream should not be stirred for too long, otherwise it will become too liquid. It is better to keep it short and crisp so that it retains its consistency. If you like it vegetarian, you can replace the liver cheese with halloumi or tofu. Halloumi should be sliced and fried until golden brown. Tofu should be marinated beforehand to give it more flavor. For a vegan version, you can use vegan mayonnaise and soy sour cream. Instead of parsley, you can also use chives, dill or chervil. For a spicier version, you can add some chili to the egg cream. The liver cheese bites taste best when they are freshly prepared. But you can also prepare them in advance and store them in the refrigerator. The egg cream should be stored separately so that the bread does not become soggy. Mustard, ketchup or horseradish go well with it as a side dish. A fresh salad also goes well with it. The bites are ideal as finger food for parties, but also as a small snack in between. They are easy to prepare and taste simply delicious!
