Description

This chicken dish with summer vegetables and corn is a real ray of sunshine on a plate! I often prepare it during the summer season, when the vegetables are at their peak. Eggplant, pepper, tomato and onion go wonderfully with tender chicken and crunchy corn. Chicken broth adds an extra touch of flavor, while fresh basil and parsley enhance everything. It is a complete dish, easy to prepare and perfect for a sunny lunch or a convivial dinner. A real treat for the taste buds!

Ingredients (14 ingredients)

  • 400 g Chicken breast(s)
  • 1 piece Yellow pepper(s)
  • 1 piece Green pepper(s)
  • 1 piece Eggplant(s)
  • 2 piece Tomato(es)
  • 2 piece Onion(s)
  • 1 can Corn
  • 2 c. à soupe Basil
  • 2 c. à soupe Chopped parsley
  • 20 cl Chicken broth
  • 30 g Butter
  • Coarse salt
  • Salt
  • Pepper

Preparation (8 steps)

Preparation of the eggplant

Wash the eggplant, cut off the stem and cut it into large dice. Pour into a colander and sprinkle with coarse salt. Leave to drain for 1 hour, then rinse thoroughly and dry carefully.

Preparation of the peppers

Wash the peppers, remove the seeds and partitions, then cut them into strips.

Preparation of tomatoes and onions

Seed the tomatoes and crush them. Finely slice the onions.

Cooking the onions

Put the sliced onions in the Thermomix bowl and add the butter. Sauté for 3 minutes at 120°C, speed 1.

Adding and cooking the chicken

Cut the chicken into strips then into dice. Add the chicken to the Thermomix bowl and cook for 5 minutes at 120°C, speed 1.

Adding vegetables and corn

Add the prepared vegetables (eggplant, peppers, tomatoes) and the drained corn to the Thermomix bowl. Sprinkle with the chicken broth. Cook for 20 minutes at 100°C, speed 1, in Reverse direction.

Checking and adjusting the cooking

Check the cooking of the vegetables and chicken. If necessary, continue cooking for a few more minutes at 100°C, speed 1, in Reverse direction.

Adding fresh herbs

When serving, sprinkle the dish with basil and chopped parsley.
