Description

This prosciutto-wrapped chicken breast recipe is a delightful twist on a classic. Ingredients (11 ingredients)

  • 2 tablespoon olive oil
  • 2 piece shallots, chopped
  • 1 clove garlic, minced
  • 1 teaspoon chopped fresh thyme
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.75 cup soft goat cheese
  • 3 piece dates, chopped
  • 1 tablespoon chopped fresh basil
  • 4 piece skinless, boneless chicken breast halves
  • 4 slice large, thin slices of prosciutto

Preparation (8 steps)

Prepare the Baking Sheet

Preheat the oven to 350 degrees F (175 degrees C). Spread 1 tablespoon of olive oil on a baking sheet; set aside.

Chop Shallots

Place the chopped shallots into the mixing bowl and chop for 3 Sec./Stufe 5.

Sauté Shallots, Garlic, and Thyme

Add 1 tablespoon of olive oil, minced garlic, chopped fresh thyme, salt, and ground black pepper to the mixing bowl. Cook for 3 Min./120°C/Stufe 1.

Combine Goat Cheese Filling

Transfer the shallot mixture to a bowl. Add the soft goat cheese, chopped dates, and chopped fresh basil. Mix until well-combined.

Prepare Chicken Breasts

Cut a 1-inch long slit with a sharp knife into the thick side of each chicken breast. Work your fingers into the slit and expand the slit to form a pocket.

Stuff Chicken Breasts

With your fingers or a spoon, stuff each chicken breast with about 1/4 cup of the goat cheese mixture. Wipe off any cheese mixture from the outside of the chicken breast.

Wrap Chicken in Prosciutto

Wrap each chicken breast in a slice of prosciutto so that the pocket opening is covered. Place chicken breasts, seam-sides down, onto the prepared baking sheet.

Bake Chicken

Bake in the preheated oven for 20 minutes. Flip chicken and continue baking until chicken is no longer pink and prosciutto is browned and crisp, about 20 minutes more.
