Description
Making fresh pasta at home is an art that gives great satisfaction! With this recipe, preparing perfect tagliatelle with the Thermomix® is child's play. The rough texture and authentic flavor of this homemade pasta go wonderfully with any type of sauce, from classic ragout to fresh pesto. Ideal for a Sunday lunch with the family or a special dinner with friends. The preparation is quick and easy, and the result is a pasta that has nothing to do with the packaged one. Try it, you won't regret it!
Ingredients (4 ingredients)

200 g flour 0

200 g flour 00

160 ml water

4 g baking soda
Preparation (5 steps)
Preparation of the flours
Weigh 200 g of flour 0 and 200 g of flour 00 and pour them into the Thermomix bowl.
Mix the flours
Close the bowl and mix the flours for 10 Sec./Stufe 4.
Preparation of the liquid solution
In a glass, dissolve 4 g of baking soda in 160 ml of water.
Dough
Gradually add the water with the baking soda to the bowl with the flours. Knead for 2 Min./Knetstufe.
Manual processing (optional)
Transfer the dough to a lightly floured pastry board and briefly work it by hand to compact it. The dough will not be completely smooth.
