Description

This hazelnut-nougat confection from the Thermomix® is a Christmas dessert with hazelnut kernels, bittersweet chocolate coating and nut-nougat mass. Refined with whipped cream and gingerbread spice, it creates a festive finger food. The preparation takes a total of 210 minutes, the active working time is about 45 minutes. The recipe yields about 60 servings and is ideal as a sweet treat for the Christmas season or other festive occasions.

Ingredients (6 ingredients)

  • 100 g Hazelnut kernels
  • 300 g Bittersweet chocolate coating
  • 200 g Nut-nougat mass
  • 200 g Whipped cream
  • 1.5 TL Gingerbread spice
  • 80 g Baking cocoa

Preparation (7 steps)

Chop hazelnuts

Put 100 g hazelnut kernels into the mixing bowl and chop for 5 sec./speed 5. Transfer.

Prepare coating and nougat

Roughly chop 300 g bittersweet chocolate coating and cut 200 g nut-nougat mass into pieces.

Heat cream

3 min/194°F/Speed 1 90

Put 200 g whipped cream into the mixing bowl and heat for 3 min./90°C/speed 1.

Melt coating and nougat

Thermomix® Setting
2 min/122°F/Speed 2 50

Add the chopped coating and nougat pieces to the hot cream in the mixing bowl and stir for 2 min./50°C/speed 2 until everything has melted.

Mix in nuts and spice

Thermomix® Setting
20 sec/Linkslauf Speed 2 Reverse

Add 1.5 tsp gingerbread spice and the chopped hazelnuts to the mixing bowl and stir in for 20 sec./reverse rotation speed 2. Use the spatula to scrape down from the edge.

Chill chocolate mixture

Line a baking dish (approx. 25 x 20 x 5 cm) with baking paper and pour in the chocolate mixture. Smooth out and refrigerate for approx. 3 hours.

Shape and toss pralines

Divide the chilled chocolate mixture into approx. 60 pieces, roll these into balls and toss in 80 g baking cocoa.
