Description

These hearty beef burgers with cranberries and cashews are a great alternative to the classic burger. The combination of the spicy beef, the sweet and sour cranberries and the crunchy cashews is simply delicious. I like to make these burgers for barbecue parties or birthdays because they are always well received. The preparation is super easy and thanks to the Thermomix® it is quick to do. If you like it a little spicier, you can add a pinch of chili. Ideal for all burger lovers who want to try something new!

Ingredients (12 ingredients)

  • 500 g Ground beef
  • 150 g Onion(s)
  • 100 g Cashews
  • 100 g Cranberries
  • 1 Zweig/e Rosemary
  • 1 Zehe(n) Garlic
  • 3 tbsp Oil
  • 1 tbsp Soy sauce
  • 1 tbsp Mustard
  • 2 tsp Honey
  • 1 tsp Salt
  • 1 tsp Pepper

Prepare onions and cashews

Put 150 g onions in the mixing bowl and chop for 3 sec./speed 5. Add 100 g cashews and chop for 5 sec./speed 5. Use the spatula to push everything down from the edge.

Fry onions and cashews

Add 3 tbsp oil to the onions and cashews in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare ground meat mixture

Put 500 g ground beef, 100 g cranberries, 2 tsp honey, 1 sprig rosemary (needles plucked), 1 tsp salt and 1 tsp pepper in a bowl and mix with a fork.

Add garlic and honey

Put 1 thick clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge. Add 1 tsp honey and sauté for 2 min./120°C/speed 1.

Mix burger mixture

Add the contents of the mixing bowl (onions, cashews, garlic) to the ground meat mixture in the bowl and mix well. Add 1 tbsp soy sauce and 1 tbsp mustard and knead with your hands to form a homogeneous mass. If necessary, put the mixture in the refrigerator for about 30 minutes.

Fry burger

Shape the burger mixture into 4 equally sized patties. Heat 1 tbsp oil in a pan and fry the burgers over medium heat (level 6/10) for about 5 minutes on each side. Add another 1 tbsp oil when turning.

About this recipe

These burgers are a further development of a recipe that I discovered years ago in a small cookbook for American cuisine. Originally they were simple beef burgers, but I found them a bit boring. So I started experimenting with different ingredients until I created this version with cranberries and cashews. The combination immediately convinced me, and since then they have been a staple at my barbecues. The ground beef forms the basis of the burger and provides the hearty taste. Make sure to use high-quality ground meat, ideally with a fat content of about 20% so that the burgers remain juicy. The onions add a light sweetness and spice to the mixture, while the cashews provide a pleasant crunch. The cranberries are the highlight: their sour sweetness forms a wonderful contrast to the hearty beef and the nutty cashews. The rosemary gives the whole thing a slightly resinous note that goes perfectly with the other flavors. Garlic must not be missing either, it provides the necessary spice. The Thermomix® makes preparation much easier. The chopping of the onions and cashews is lightning fast and even. Make sure not to grind the cashews too finely, they should still be noticeable. Sautéing the onions and cashews in the Thermomix® ensures that they develop their aroma optimally. When mixing the ground meat mixture, it is important not to knead the ingredients too much, otherwise the burgers can become tough. It is best to mix gently with a fork or your hands until everything is well mixed. Cooling the mixture before forming the patties helps them to keep their shape better. For a vegetarian version, you can replace the ground beef with a mixture of lentils, rice and vegetables. Instead of honey, you can use maple syrup. If you like it spicier, you can add a pinch of chili powder or finely chopped jalapeños. Smoked paprika powder also goes very well. Serve the burgers classically in a bun with lettuce, tomatoes, cucumbers and your favorite sauce. Cranberry sauce or a homemade cranberry relish are particularly good with it. French fries, sweet potato fries, a fresh salad or grilled vegetables are suitable as side dishes. The raw burger mixture can be stored in the refrigerator for up to one day. The fried burgers can also be stored in the refrigerator and reheated the next day. You can also prepare the burgers by forming the patties and storing them in the refrigerator until frying. This saves you time when you are expecting guests.
