Description

This hearty chicken dish with fresh broccoli and bell pepper is prepared in no time and tastes simply delicious! The potatoes are fried separately to get a nice crust. The dish is perfect for a quick lunch or dinner during the week. I often make it when I don't have much time, but still want to put something healthy and delicious on the table. If you like, you can add some garlic or chili to give the dish a special touch. An absolute favorite recipe!

Ingredients (12 ingredients)

  • 150 g Potatoes
  • 1.5 tbsp Oil
  • Salt
  • Pepper
  • 1 piece Egg yolk
  • 3 tbsp Milk
  • 150 g Chicken fillet
  • 1 tbsp Flour
  • 2 tbsp Breadcrumbs
  • 200 g Broccoli
  • 0.5 piece Bell pepper
  • 2 Stiele Parsley

Preparation (11 steps)

Prepare potatoes

Wash 150 g potatoes thoroughly, quarter and put in a bowl. Add 1/2 tbsp oil, salt and pepper and mix well.

Fry potatoes

Fry the prepared potatoes in a small pan covered, stirring occasionally, for about 10 minutes, then uncovered for about 5 minutes until brown, and season with salt and pepper.

Prepare egg mixture

Whisk 1 egg yolk and 3 tbsp milk in a bowl, season with salt and pepper.

Prepare chicken

Wash 1 chicken fillet (approx. 150 g) and pat dry. First turn in 1 tbsp flour, then in the egg mixture and then in 1–2 tbsp breadcrumbs and press down a little.

Fry chicken

Heat 1 tbsp oil in a pan. Fry the prepared chicken fillet in it for 7–9 minutes, turning occasionally.

Prepare broccoli

Clean approx. 200 g broccoli, wash and divide into florets.

Steam broccoli

Thermomix® Setting
7 min/Varoma/Speed 1 Varoma

Put 500 ml water into the mixing bowl. Insert steamer basket and add the prepared broccoli. Steam for 7 min./Varoma/level 1.

Add bell pepper

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Clean ½ bell pepper each, wash and cut into strips. After the time has elapsed, add the pepper strips to the broccoli in the steamer basket and steam for a further 3 min./Varoma/level 1.

Season vegetables

Remove the steamer basket and season the vegetables with salt and pepper.

Chop parsley

Thermomix® Setting
3 sec/Speed 5

Wash 2 sprigs of parsley, pat dry, pluck off the leaves and place in the mixing bowl. Chop for 3 sec./level 5.

Arrange

Arrange potatoes, broccoli and meat on a plate and sprinkle with the chopped parsley.
