Description

This hearty pasta-ground meat-cheese-pan is absolute soul food! I love making it when things need to be quick and I'm very hungry. The dish is wonderfully hearty and the combination of ground meat, kidney beans, corn and, of course, lots of cheese is simply unbeatable. The preparation is very simple and the result tastes great to the whole family. Perfect for a cozy evening or a quick lunch. If you like it a little spicier, you can add an extra pinch of chili powder. A real filler!

Ingredients (18 ingredients)

  • 2 piece Onions
  • 1 clove Garlic
  • 1 piece red Chili pepper
  • 2 tbsp Oil
  • 250 g mixed Ground meat
  • 2 tbsp Tomato paste
  • 425 ml Kidney beans
  • 425 ml Corn
  • 2 can diced Tomatoes
  • 900 ml Vegetable broth
  • Salt
  • Pepper
  • 1 tsp Sweet paprika
  • 1 tsp Chili powder
  • 500 g short Macaroni
  • 75 g grated Gouda
  • 75 g grated Cheddar
  • 0.5 bunch Parsley

Preparation (7 steps)

Prepare onions, garlic and chili

Peel and quarter 2 onions and 1 clove of garlic. Slit 1 red chili pepper lengthwise, remove the seeds and halve. Place everything in the mixing bowl and chop for 3 seconds/speed 5. Use the spatula to push down.

Brown the ground meat

Add 2 tbsp oil and 250 g mixed ground meat and sauté for 5 min./120°C/speed 1.

Sauté the vegetables

Add 2 tbsp tomato paste and sauté for 3 min./120°C/speed 1.

Add beans, corn, tomatoes and broth

Drain and rinse 1 can (425 ml) of kidney beans and 1 can (425 ml) of corn. Add together with 2 cans of diced tomatoes and 900 ml of vegetable broth to the mixing bowl.

Season and cook the pasta

Season with salt, pepper, 1 tsp sweet paprika and 1 tsp chili powder. Add 500 g short macaroni and simmer for 10 min./100°C/reverse speed 1.

Add and melt cheese

1 min/140°F/Linkslauf Speed 1 60 Reverse

Add 75 g grated Gouda and mix in for 1 min./60°C/reverse speed 1. Sprinkle 75 g grated Cheddar over the top and melt for 5 min./60°C/reverse speed 1.

Wash and chop ½ bunch of parsley and sprinkle the cheese noodles with it before serving.

About this recipe

This pasta-ground meat-cheese-pan is a real classic in our house. It came about out of necessity when I didn't feel like standing in the kitchen for long, but still wanted to put something hearty and savory on the table. I was inspired by American casseroles that I loved as a child, but I wanted a quicker and easier version for everyday use. The list of ingredients may seem long at first glance, but each component contributes to the taste experience. The onions, garlic and chili pepper form the aromatic base, which is intensified by frying in oil. The ground meat provides the necessary satiety and savory taste. Tomato paste adds a slight sweetness and acidity that harmonizes perfectly with the kidney beans and corn. The diced tomatoes and vegetable broth form the sauce in which the pasta cooks. Salt, pepper, paprika and chili powder round off the dish and give the pan the desired spice. The Gouda provides a creamy consistency and a mild cheese flavor, while the Cheddar with its stronger aroma provides the special kick. The parsley adds a fresh note to the dish at the end. With the Thermomix®, it is important to add the ingredients in the correct order so that everything is cooked optimally. Make sure to brown the ground meat well before adding the tomato paste so that it does not clump. The pasta should not cook for too long, otherwise it will become mushy. It is best to try it after 8 minutes of cooking time and, if necessary, extend the cooking time by a few minutes. When mixing in the cheese, it is important to use the reverse function so that the pasta is not crushed. For a vegetarian version, you can simply replace the ground meat with soy granules or lentils. If you like it vegan, you can use vegan cheese and make sure that the vegetable broth is vegan. Instead of chili powder, you can also use fresh chilies or add Tabasco. The pan can also be wonderfully varied with other spices such as cumin, oregano or thyme. It is best to serve the pasta-ground meat-cheese-pan directly from the Thermomix®. A fresh salad or a crispy baguette goes well with it. If you like, you can add a dollop of sour cream or crème fraîche to the pan. Leftovers of the pasta-ground meat-cheese-pan can easily be stored in the refrigerator and warmed up the next day. It then tastes almost even better because the flavors have blended even better. You can also prepare the pan well and store it in the refrigerator until you need it. Then you just have to put it in the Thermomix® and finish cooking it.
