Description

The hearty gnocchi-sauerkraut-pan with bacon from the Thermomix® is a quick and inexpensive main course with gnocchi, sauerkraut and bacon. With the Thermomix®, the dish is prepared in just 25 minutes and yields 4 servings. Ideal for student cuisine or as an uncomplicated family meal. Preparation requires approximately 20 minutes of work.

Ingredients (12 ingredients)

  • 500 g Gnocchi from the refrigerated section
  • 400 g Sauerkraut "ready-to-eat" without cooking time
  • 100 ml Vegetable broth
  • 75 g Bacon
  • 25 g Clarified butter, amount divided
  • 80 g Onion
  • 0.5 tsp Sugar
  • 0.25 tsp freshly ground black Pepper
  • 1 pinch freshly grated Nutmeg
  • 1 pinch ground Caraway seeds
  • 1 pinch Salt
  • 1 nach Bedarf Chives

Preparation (9 steps)

Prepare onion and bacon

Peel 1 onion (approx. 80 g) and cut into small cubes. Also cut 75 g bacon into small cubes. Set both aside.

Fry gnocchi

Melt just under 20 g clarified butter (approx. 1 tbsp) in a large pan. Add 500 g gnocchi and fry on all sides over high heat until light brown. For a better cooking process inside, add 3 tbsp water and wait with the lid on until the water is absorbed. Then continue frying without the lid. Remove and set aside covered.

Chop onion and bacon

Put the onion cubes in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion and bacon

Add 5 g clarified butter and the bacon cubes to the onions in the mixing bowl and sauté for 4 min./120°C/speed 1.

Add and steam sauerkraut

Add 400 g sauerkraut (drain first if necessary) to the mixing bowl and steam for 4 min./100°C/reverse rotation speed 1.

Season sauerkraut

Add ½ tsp sugar, 1 pinch salt, ¼ tsp freshly ground black pepper, 1 pinch freshly grated nutmeg and 1 pinch ground caraway seeds to the mixing bowl and mix for 10 sec./reverse rotation speed 1.

Simmer sauerkraut

5 min/212°F/Linkslauf Speed 1 100 Reverse

Pour 100 ml vegetable broth into the mixing bowl and simmer for 5 min./100°C/reverse rotation speed 1 without the measuring cup. If it is still too moist, let it boil down for a few more minutes. Season the sauerkraut with salt and pepper.

Mix in gnocchi

The gnocchi-sauerkraut-pan with bacon is a dish that reminds me of my childhood. My grandma often cooked it, especially in autumn and winter when it was cold and uncomfortable outside. It was always a feast when the scent of sauerkraut and bacon wafted through the house. The hearty combination of sour sauerkraut, savory gnocchi and salty bacon is simply unbeatable. The ingredients all play an important role in the taste and texture of the dish. The gnocchi, preferably from the refrigerated section, bring a pleasant consistency and a slight sweetness. The sauerkraut, ideally "ready-to-eat" without a long cooking time, contributes the acidity and a certain spiciness. The bacon provides the salty, smoky flavor and the necessary heartiness. The onions add sweetness and depth, while the spices such as pepper, nutmeg and caraway seeds round off the dish and give it a special note. The clarified butter is important to bring out the flavors optimally and give the ingredients a nice browning. When preparing in the Thermomix®, it is important not to chop the onions and bacon too finely, as they could burn when sautéing. Make sure that the sauerkraut does not contain too much liquid before you put it in the mixing bowl. If necessary, you can squeeze it out a little beforehand. When simmering the sauerkraut without the measuring cup, the liquid evaporates better and the dish does not become too soupy. The gnocchi should only be mixed in carefully at the end so that they do not fall apart. For a vegetarian version, you can simply omit the bacon or replace it with smoked tofu. To make the dish vegan, you must also replace the clarified butter with vegetable oil. You can vary the spices as you like. Caraway seeds are not for everyone, but can be replaced by marjoram or thyme. A pinch of chili provides a pleasant spiciness. Serve the gnocchi-sauerkraut-pan best hot, directly from the Thermomix®. A dollop of sour cream or yogurt goes well with it and mitigates the acidity of the sauerkraut. Fresh herbs such as chives or parsley give the dish a fresh note. A fresh salad or a crispy bread is suitable as a side dish. Leftovers of the gnocchi-sauerkraut-pan can be easily stored in the refrigerator. They will keep there for about 2-3 days. To reheat, you can either heat them in the microwave or in a pan. The dish can also be prepared well in advance. You can prepare the sauerkraut the day before and store it in the refrigerator. However, you should only fry the gnocchi shortly before serving so that they do not become too soft.
