Description

This hearty vegetable pan with fried egg is a quick and easy dish that is perfect for the end of the working day. I often make it when I need something quick and still want something healthy on the table. The vegetables, in this case kohlrabi, carrots, mushrooms and spring onions, are cooked in a delicious curry broth and refined with a dollop of crème fraîche. The fried eggs complete the dish and provide an extra portion of protein. A great vegetarian dish that also tastes good to meat eaters!

Ingredients (13 ingredients)

  • 300 g Kohlrabi
  • 300 g Carrots
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 bunch Spring onion
  • 3 tbsp Oil
  • 200 g Mushrooms
  • 1 piece Onion
  • 1 clove Clove of garlic
  • 1 tsp Curry
  • 400 ml Vegetable broth
  • 200 g Crème fraîche
  • 4 piece Eggs (size M)

Preparation (10 steps)

Prepare kohlrabi and carrots

Peel the kohlrabi and carrots and cut into bite-sized sticks or slices. Place in a saucepan, cover with salt water and cook for about 10 minutes until al dente. Then drain and set aside.

Prepare spring onions and mushrooms

Clean and wash the spring onions and cut into rings. Clean the mushrooms and halve or quarter them depending on their size. Set both aside.

Chop onion and garlic

Peel the onion and garlic (if used) and put them in the mixing bowl. Chop for 3 sec./level 5.

Sauté onion and garlic

Add 2 tbsp of oil and sauté for 3 min./120°C/level 1.

Add mushrooms and curry

Thermomix® Setting

Add the mushrooms and sauté for 3 min./120°C/level 1. Add curry powder and sauté for 30 sec./120°C/level 1.

Add vegetables and spring onions

Add kohlrabi, carrots and spring onions and sauté for 2 min./100°C/level 1.

Deglaze with broth and simmer

Add vegetable stock and simmer for 5 min./100°C/level 1.

Stir in crème fraîche

Thermomix® Setting
1 min/194°F/Gentle stir speed 90

Add crème fraîche and stir in for 1 min./90°C/gentle stir setting. Season with salt and pepper.

Fry fried eggs

Heat 1 tbsp oil in a pan. Fry the eggs in it to make fried eggs. Season with salt and pepper.

Arrange and serve

Arrange the vegetable curry pan on plates and top with fried eggs. Serve immediately.
