Description

This hearty bell pepper pan with tender pork fillet is an absolute highlight! I especially like to make it in the fall when the bell peppers are nice and ripe. The combination of sweet bell peppers, spicy herbs and juicy meat is simply unbeatable. The small new potatoes make the dish a complete meal. If you like it a little spicier, feel free to add a pinch more cayenne pepper. A great dish for the whole family and also great to prepare in advance!

Ingredients (15 ingredients)

  • 1.2 kg Bell peppers
  • 750 g Small new potatoes
  • 1 piece Large onion
  • 2 clove Garlic
  • 1 Zweig Rosemary
  • 3 Stiele Thyme
  • 600 g Pork fillet
  • 2 tbsp Clarified butter
  • to taste Salt
  • to taste Pepper
  • to taste Cayenne pepper
  • 3 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 4 tbsp Tomato ketchup
  • 1 tsp Vegetable broth

Preparation (9 steps)

Prepare bell peppers, onion and garlic

Clean, wash and cut the bell peppers into pieces. Wash and halve or quarter the potatoes thoroughly. Peel and quarter the onion and place in the mixing bowl. Peel the garlic cloves.

Chop onion and garlic

Chop the onion and garlic for 3 sec./speed 5. Push down with the spatula.

Sauté onion and garlic

Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Add bell peppers and potatoes

Add bell peppers, potatoes, tomato paste, tomato ketchup, vegetable broth, salt, pepper and cayenne pepper. Add 1/4 l water.

Simmer vegetables

15 min/212°F/Speed 1 Linkslauf 100 Reverse

Close the lid and simmer for 15 min./100°C/speed 1 reverse rotation.

Sear meat

In the meantime, pat the pork fillet dry. Heat clarified butter in a pan and sear the meat vigorously on all sides. Season with salt and pepper. Add rosemary and continue to fry over low heat for 15–17 minutes.

Let the meat rest and prepare the sauce

Wrap the meat in aluminum foil and let it rest for about 5 minutes. Dissolve the roasting juices with 4–5 tbsp water and pour into the mixing bowl with the meat juice from the pork fillet.

Season vegetables

Heat the vegetables in the mixing bowl for 2 min./100°C/speed 1 and season.

Arrange

Cut the meat, arrange everything and garnish with thyme.
