Description

This homemade gyro loaf is a delicious and satisfying alternative to traditional gyro meat. I've been making this recipe for years, and it's always a hit! The combination of ground lamb and beef, seasoned with oregano, cumin, marjoram, rosemary, thyme, pepper, and salt, creates a flavorful and aromatic dish. It's perfect for serving in pita bread with your favorite toppings, or as a main course with a side salad. The gyro loaf is baked in a water bath to ensure a moist and tender texture. It's ideal for a hearty lunch or dinner, and the leftovers are great for sandwiches. This recipe is perfect for any occasion!

Ingredients (12 ingredients)

  • 0.5 piece medium onion
  • 1 pound ground lamb
  • 1 pound 80/20 ground beef
  • 1 tbsp minced garlic
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp dried marjoram
  • 1 tsp ground dried rosemary
  • 1 tsp ground dried thyme
  • 1 tsp ground black pepper
  • 1.5 tsp fine sea salt

Chop the onion

Place ½ medium onion, cut into chunks, into the Thermomix bowl and chop for 5 Sec./Stufe 5. Use the spatula to scrape down the sides of the bowl.

Squeeze the onion

Scoop the chopped onions onto the center of a towel, gather up the towel ends, and squeeze to remove excess liquid. This step is crucial for preventing a soggy gyro loaf.

Combine ingredients

In a large bowl, combine the squeezed onions, 1 pound ground lamb, 1 pound 80/20 ground beef, 1 tablespoon minced garlic, 1 teaspoon dried oregano, 1 teaspoon ground cumin, 1 teaspoon dried marjoram, 1 teaspoon ground dried rosemary, 1 teaspoon ground dried thyme, 1 teaspoon ground black pepper, and 1½ teaspoons fine sea salt. Mix with your hands until well combined. Cover and refrigerate for 1 to 2 hours to allow the flavors to blend.

Preheat oven and prepare loaf pan

Preheat the oven to 325 degrees F (165 degrees C). Evenly coat a 9x5-inch loaf pan with cooking spray.

Process meat mixture

Working in 2 batches if necessary, place meat mixture into the Thermomix bowl and pulse until finely chopped and the texture feels tacky, about 1 Min./Stufe 5.

Transfer to loaf pan

Transfer the mixture into the prepared loaf pan and pack down to make sure there are no air pockets.

Prepare water bath

Line a medium roasting pan with a damp kitchen towel. Place the loaf pan in the center of the towel-lined roasting pan, and transfer it into the preheated oven. Carefully pour boiling water into the roasting pan until it comes halfway up the sides of the loaf pan.

Bake the gyro loaf

Bake in the preheated oven until the gyro meat is no longer pink in the center, about 1 hour to 1 hour 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Cool and serve

Pour off any accumulated fat, and allow to cool slightly before slicing thinly and serving.
