Description

These homemade lemon biscuits are a delight that I prepare often. The combination of the citric aroma of the lemon with the sweetness of the butter is simply irresistible. They are perfect to accompany an afternoon coffee or to enjoy as a small whim. The dough is very easy to make and with the Thermomix® it is prepared in the blink of an eye. Furthermore, they can be cut with different shapes to make them more fun, especially if there are children at home! The lemon zest gives it a fresh and vibrant touch that makes them unique. Go ahead and try them, you'll love them!

Ingredients (6 ingredients)

  • 200 gramos Sugar
  • 4 cucharadas soperas Butter
  • 420 gramos Flour
  • 1 cup Lemon zest
  • 1 chorro Vanilla
  • 1 piece Egg

Preparation (7 steps)

Mix butter and sugar

Thermomix® Setting
20 sec/Speed 4

Add 200 grams of sugar and 4 tablespoons of butter at room temperature into the bowl. Mix for 20 seconds at speed 4.

Add egg and vanilla

Thermomix® Setting
15 sec/Speed 3

Add 1 egg and a splash of vanilla to the bowl. Mix for 15 seconds at speed 3.

Incorporate lemon zest

Thermomix® Setting
10 sec/Speed 3

Add 1 cup of lemon zest to the bowl. Mix for 10 seconds at speed 3.

Add flour

Thermomix® Setting
30 sec/Speed 5

Add 420 grams of flour to the bowl. Mix for 30 seconds at speed 5. If the dough is too sticky, add a little more flour.

Rest the dough

Remove the dough from the bowl, form a ball, wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.

Cut out the biscuits

Preheat the oven to 180°C. Roll out the dough with a rolling pin on a floured surface and cut out the biscuits with the desired shape.

Bake the biscuits

Place the biscuits on a baking tray and bake for 15-20 minutes, or until golden brown.
