Description

This recipe for homemade salt sticks is a hearty snack that is ideal for parties or as a side dish for brunch. The preparation is done with the Thermomix®, which simplifies the kneading of the dough. The salt sticks are sprinkled with various seeds and spices and baked in the oven until golden brown. The recipe is vegetarian and offers an inexpensive alternative to purchased salt sticks. The preparation time is about 2 hours, including the resting time for the dough.

Ingredients (13 ingredients)

  • 150 g Water
  • 100 g Milk
  • 20 g Yeast, fresh
  • 1 EL brown sugar
  • 500 g Wheat flour 550
  • 10 g Salt
  • 2 EL Milk
  • 1 Stück Egg yolk
  • Salt
  • Pepper
  • Sesame
  • Poppy seeds
  • Black cumin

Preparation (9 steps)

Dissolve yeast

Add 150 g water, 100 g milk and 20 g fresh yeast and 1 tbsp brown sugar to the mixing bowl and heat for 2 min./37°C/speed 1.

Knead dough

Add 500 g wheat flour 550 and 10 g salt and knead for 3 min./kneading stage to form a dough.

Let dough rise

Place the dough in a 2 liter bowl with a lid and let it rise in a warm place for 1 hour.

Portion dough

Lightly flour the dough base. Cut the dough into 6 equal pieces with a knife.

Shape dough

Roll out each piece of dough into an oblong-oval shape and then roll it up tightly.

Place dough pieces and let rest

Place the dough pieces with the seam facing down on a greased baking sheet. Cover with a kitchen towel and let rise for 20 minutes.

Brush and sprinkle

Whisk together 2 tbsp milk and 1 egg yolk and brush the dough pieces with it. Sprinkle with salt, pepper, sesame, poppy seeds, black cumin, etc. to taste.

Baking

Bake in the preheated oven at 200°C top/bottom heat in the lowest rack for 15 minutes. Then turn down to 150°C and bake for another 5-10 minutes.

Let cool

Remove salt sticks from the baking sheet and let cool on a wire rack.
