Description

This dish of wholemeal spaghetti with marinated tofu and stir-fried vegetables is a delicious and nutritious option for any day of the week. The tofu, marinated in soy sauce, lemon juice and spices, acquires an incredible flavour that perfectly complements the sweetness of the courgette and cherry tomatoes. It is a vegetarian dish rich in protein and fibre, ideal for a complete and balanced meal. It is also prepared in a short time, perfect for when you don't have much time to cook! You can add other seasonal vegetables such as peppers or aubergines to give it an even more personal touch. A dish that you will surely love!

Ingredients (12 ingredients)

  • 250 gr Smoked tofu
  • 1 piece Medium courgette
  • Cherry tomatoes
  • 100 gr Wholemeal spaghetti
  • 5 cucharassoperas Fried tomato
  • White wine
  • Extra virgin olive oil
  • Soy sauce
  • 1 piece Lemon (juice)
  • 1 cucharilla Oregano
  • 1 cucharilla Pepper
  • 1 cucharilla Ground cumin

Preparation (8 steps)

Tofu preparation

Cut the 250 gr block of smoked tofu into pieces of approximately 1 cm long. Place the tofu pieces in a large dish or tupper.

Tofu marinade

Add the juice of 1 lemon, 1 teaspoon of oregano, 1 teaspoon of pepper and 1 teaspoon of ground cumin to the tofu. Cover the tofu with soy sauce and leave to marinate in the fridge for at least 1 hour (or overnight).

Pasta cooking

Thermomix® Setting
10 min/212°F/Speed 1 100

Put 100 gr of wholemeal spaghetti in the Thermomix bowl. Add water to cover the pasta. Program 10 Min./100°C/Stufe 1. Reserve half a glass of the cooking water.

Vegetable preparation

Cut 1 medium courgette into small cubes and the cherry tomatoes in half. Reserve.

Stir-frying the vegetables

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Add a dash of olive oil to the Thermomix bowl. Add the courgette and cherry tomatoes. Program 5 Min./Varoma/Stufe 1.

Browning the tofu

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Remove the vegetables from the bowl and reserve. Add the marinated tofu cubes (without the liquid) to the Thermomix bowl. Program 5 Min./Varoma/Stufe 1 to brown the tofu.

Adding the marinade and vegetables

3 min/212°F/Speed 1 100

Add the marinade liquid, the stir-fried vegetables, 5 tablespoons of fried tomato and a dash of white wine to the Thermomix bowl. Program 3 Min./100°C/Stufe 1.

Mix with the pasta

Thermomix® Setting
1 min/194°F/Linkslauf Speed 1 90 Reverse

Add the cooked pasta and the half glass of reserved cooking water to the Thermomix bowl. Program 1 Min./90°C/Linkslauf Stufe 1 to mix everything well.
