Description

This salmon-potato-salad is a real treat! The combination of creamy avocado, spicy rocket and gently roasted salmon makes it a special highlight. I especially like to make it in the summer, when the potatoes come fresh from the field. The salad is not only delicious, but also rich in healthy fats and proteins. It is perfect as a light lunch or as a side dish for grilling. A dash of lemon juice provides the necessary freshness. Try it out, you will be thrilled!

Ingredients (11 ingredients)

  • 1 kg waxy potatoes
  • 200 g Cherry tomatoes
  • 1 bunch Rocket
  • 1 piece Avocado
  • 6 tbsp Lemon juice
  • Salt
  • Pepper
  • 1 tsp medium hot Mustard
  • Sugar
  • 6 tbsp Oil
  • 400 g Salmon fillet (without skin)

Preparation (8 steps)

Prepare potatoes

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Wash 1 kg waxy potatoes and place in the steamer basket. Fill 1 liter of water into the mixing bowl, insert the steamer basket and steam for 20 min./Varoma/level 1.

Peel and cut potatoes

Drain the cooked potatoes, briefly quench, peel and let cool. Then cut into slices and place in a large bowl.

Prepare tomatoes and avocado

Wash and halve 200 g cherry tomatoes. Halve 1 avocado, remove the stone, peel and cut the pulp into pieces. Sprinkle the avocado pieces with 1 tbsp lemon juice to prevent browning.

Prepare marinade

Thermomix® Setting

Put 5 tbsp lemon juice, salt, pepper, 1 tsp medium hot mustard and sugar to taste in the mixing bowl and stir for 10 sec./level 3. Then add 6 tbsp oil and stir in for another 10 sec./level 3.

Mix salad

Add the prepared tomatoes and avocado to the potato slices in the bowl. Pour the marinade over it and mix carefully.

Fry salmon

Wash 400 g salmon fillet (without skin), pat dry and cut into pieces. Heat 2 tablespoons of oil in a pan. Fry salmon in it for about 3 minutes, turning.

Season salmon and refine salad

Season the fried salmon with salt and pepper. Season the potato salad again and season if necessary. Clean, wash, drain 1 small bunch of rocket and carefully lift it under the salad. Carefully lift in the fried salmon as well.

Arrange and serve

Arrange the potato salad on a plate and sprinkle with freshly ground pepper. Serve immediately.
