Description

This egg salad with spring onions is a real classic and super easy to prepare. I especially like to make it when I have leftover boiled eggs from the day before. The combination of the eggs, the fresh spring onions and the creamy sauce is simply unbeatable. Perfect for a quick breakfast, as a bread topping or as a side dish for grilling. If you like it a little lighter, you can use yogurt instead of mayonnaise. And the best thing: it's ready in just a few minutes!

Ingredients (8 ingredients)

  • 10 piece Egg(s)
  • 0.5 tsp Salt
  • 0.5 tsp Sweet paprika powder
  • 0.5 tsp Black pepper
  • 1 bunch Spring onion(s)
  • 1 Glas Salad cream
  • 1 kl. Bund Curly parsley
  • 3 tbsp Milk

Preparation (4 steps)

Boil eggs

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 10 eggs to the simmering basket. Fill 1 liter of water into the mixing bowl, insert the simmering basket and cook for 10 min./100°C/speed 1. Then quench the eggs with cold water and let them cool until they are lukewarm. Peel the eggs, cut them into small pieces and put them in a bowl.

Prepare spring onions

Wash 1 bunch of spring onions, cut into rings and add to the eggs in the bowl.

Prepare salad

Add 0.5 tsp salt, 0.5 tsp sweet paprika powder and 0.5 tsp black pepper to the eggs and spring onions and mix everything. Add 1 glass of salad cream and 3 tbsp of milk and mix well with the remaining ingredients.

Add parsley

Thermomix® Setting
3 sec/Speed 8

Wash 1 small bunch of curly parsley, chop in the mixing bowl for 3 sec./speed 8 and then stir into the salad.
