Description

This crispy and creamy summer salad is a real treat for the taste buds! I love preparing it during hot summer days because it is fresh, light and full of flavors. Juicy beef heart tomatoes, tender zucchini and creamy feta cheese blend perfectly with freshly chopped basil and mint. The crispy ham brings a gourmet and original touch. This salad is perfect for a light lunch, a picnic or an aperitif with friends. It is prepared in no time and can be adapted according to your desires. Do not hesitate to add other seasonal vegetables or replace the feta with mozzarella for an even more Italian version. A real treat!

Ingredients (10 ingredients)

  • 5 brins basil
  • 1 c. à café dried oregano
  • 3 c. à soupe olive oil
  • 2 c. à soupe Xeres vinegar
  • 5 brins mint
  • 3 piece new white onions
  • 2 piece tender zucchinis
  • 4 slice Aoste ham
  • 100 g feta
  • 3 piece beef heart tomatoes

Preparation (6 steps)

Preparation of aromatic herbs

Thermomix® Setting

Put 5 sprigs of basil and 5 sprigs of mint in the Thermomix bowl. Finely chop for 3 Sec./Stufe 8. Set aside.

Preparation of the vinaigrette

In a salad bowl, mix 3 tbsp of olive oil, 2 tbsp of Xeres vinegar, salt, pepper and 1 tsp of dried oregano. Mix well and set aside.

Ham preparation

Heat a dry frying pan. When it is very hot, place the 4 slices of ham on top. Turn them over as soon as they start to curl and heat the other side. They just need to dry out without burning. Let them cool on a plate, then cut them into strips.

Vegetable preparation

Cut the 3 beef heart tomatoes into quarters, then these into slices. Wash the 2 small tender zucchinis and cut them, without peeling them, into four lengthwise. Then cut each strip obtained into very thin slices. Mince the 3 small new white onions. Cut the 100 g of feta into cubes.

Salad assembly

Mix all the ingredients (tomatoes, zucchini, onions, feta, chopped basil and mint) in the salad bowl containing the vinaigrette, except for the ham. Mix gently. Refrigerate for half an hour so that all the flavors blend together.

Service

When serving, sprinkle the salad with strips of ham and mix gently.
