Description

This tomato avocado salad is an absolute highlight for warm days! The creamy avocado harmonizes perfectly with the juicy tomatoes and the fresh lemon balsamic dressing. I love how quick and easy this salad is to prepare – ideal when things need to be done quickly. Add a few toasted ciabatta slices and you have a light, summery dish. If you like, you can add a few fresh herbs. A real treat!

Ingredients (10 ingredients)

  • 2 piece Avocado
  • 4 piece Tomato
  • 4 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 0.5 piece Lemon juice from it
  • to taste Salt
  • to taste Pepper
  • Ciabatta
  • 1 clove Clove of garlic
  • to taste Olive oil Herbs as desired

Preparation (5 steps)

Chop garlic

Thermomix® Setting

Put 1 clove of garlic into the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare garlic oil

Remove the chopped garlic from the mixing bowl and mix with a little olive oil in a small bowl. Set aside.

Toast ciabatta

Cut the ciabatta into slices, brush with the garlic oil and toast in a preheated oven at approx. 180°C until golden brown. In the meantime, prepare the salad.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Put 4 tbsp olive oil, 1 tbsp balsamic vinegar and the juice of half a lemon into the mixing bowl and stir for 10 sec./speed 3.

Arrange salad

Cut 2 avocados and 4 tomatoes into bite-sized cubes and place in a bowl. Drizzle the dressing from the mixing bowl over it. Season with salt, pepper and herbs to taste. Serve lukewarm with the toasted ciabatta slices.
