Description

This salad of chickpeas and cherry tomatoes is a real triumph of Mediterranean flavors! I often prepare it during the summer, when the cherry tomatoes are at their best, sweet and juicy. The chickpeas, rich in protein, make it a light and nutritious single dish. The addition of black olives and fresh basil gives an extra touch of flavor. It is perfect for a quick lunch, an outdoor picnic or as a tasty side dish. It is prepared in a flash and can be customized with other ingredients such as cucumbers or peppers. An explosion of taste and freshness in every bite!

Ingredients (7 ingredients)

  • 400 g Chickpeas (cooked or canned)
  • 250 g Pachino cherry tomatoes
  • 70 g Pitted black olives
  • 50 ml Extra virgin olive oil
  • 1 bunch Fresh basil
  • 1 bunch Fresh parsley
  • 1 pinch Salt

Preparation of the chickpeas

Thermomix® Setting
30 min/212°F/Speed 1 100

If using dried chickpeas, soak them for at least 12 hours. Drain and cook them in the Thermomix basket with water and a pinch of salt for 30 Min./100°C/Stufe 1. Alternatively, use canned chickpeas, rinsed and drained.

Cutting the cherry tomatoes

Wash and halve 250g of Pachino cherry tomatoes. Set aside.

Preparation of the dressing

Thermomix® Setting
10 sec/Speed 8

Put 50g of pitted black olives, 50ml of extra virgin olive oil and a pinch of salt in the bowl. Blend for 10 Sek./Stufe 8.

Assembling the salad

In a bowl, combine the drained chickpeas, the cut cherry tomatoes and the dressing prepared in the Thermomix. Mix gently.

Adding the olives and herbs

3 sec/Speed 5

Add 2 tablespoons of whole pitted black olives to the salad. Finely chop 1 bunch of basil and 1 bunch of parsley in the Thermomix for 3 Sek./Stufe 5. Add the chopped herbs to the salad and mix.

Service

Serve the chickpea, tomato and olive salad garnished with a few fresh basil leaves.
