Description

This Mediterranean orzo salad is a fresh and delicious dish, perfect for hot days. The combination of orzo pasta with the sweetness of corn, the acidity of tomato, and the salty touch of feta cheese make it an ideal option for a light meal or as a side dish. I often prepare it in summer to take to picnics or barbecues. It's a guaranteed success! Furthermore, it is very easy to adapt to your tastes: you can add cucumber, pepper, or even black olives. Ingredients (10 ingredients)

  • 150 gramos orzo pasta
  • 100 gramos sweet corn
  • 1 piece tomato
  • 1 trozo onion
  • 1 pinch chopped parsley
  • 2 cucharadas soperas green olives
  • 80 gramos feta cheese
  • 1 chorro lemon
  • 1 chorro olive oil
  • 1 pinch salt

Cooking the orzo pasta

Thermomix® Setting

Fill the glass with 1 liter of water and add a pinch of salt. Program 8 Min./100°C/Stufe 1. Once the water is boiling, add 150 g of orzo pasta through the spout and program the cooking time indicated on the package (approximately 6 minutes) /100°C/Linkslauf Stufe 1. Drain the pasta and set aside.

Preparation of the vegetables

Wash and cut 1 tomato into small cubes. Also cut 1 piece of onion into small cubes. Set both aside in a large bowl.

Mixing ingredients

In the bowl with the tomato and onion, add 100 g of sweet corn, 2 tablespoons of green olives cut into slices and 1 pinch of chopped parsley. Mix well.

Dressing and presentation

Add the cooked orzo pasta to the bowl with the vegetables. Season with 1 splash of lemon, 1 splash of olive oil and 1 pinch of salt. Mix gently to integrate all the ingredients. Serve the salad and crumble 80 g of feta cheese on top. Sprinkle with a little more chopped parsley before serving.

Although orzo pasta is not originally from the Mediterranean, its rice-like shape makes it perfect for absorbing the flavors of this region, creating a light and very tasty salad. The first time I tried it was in a small restaurant in Greece, and since then I have adapted the recipe to my liking, using the Thermomix® to facilitate the cooking of the pasta and optimize the time in the kitchen. Each ingredient plays a crucial role in the balance of this salad. The orzo pasta, with its soft and slightly al dente texture, is the base that binds all the other flavors. The sweet corn brings a touch of sweetness that contrasts wonderfully with the acidity of the tomato, cut into small cubes so that it integrates well into the mixture. The onion, finely chopped, adds a point of pungency that is softened with the dressing. The green olives, with their salty and slightly bitter taste, complement the sweetness of the corn and tomato. The feta cheese, crumbled just before serving, provides a creaminess and a salty flavor that elevate the salad to another level. The chopped parsley, fresh and aromatic, adds a touch of color and freshness. For cooking the pasta in the Thermomix®, it is important to follow the manufacturer's instructions regarding the cooking time, as it may vary depending on the brand of the pasta. Once cooked, it is essential to drain it well to prevent the salad from becoming watery. While the pasta is cooking, you can prepare the rest of the ingredients. When cutting the vegetables, make sure they are the same size so that the salad has a uniform texture. The dressing is simple but essential: a good extra virgin olive oil, fresh lemon juice and a pinch of salt. You can adjust the amount of lemon according to your taste, but remember that acidity is key to balancing the flavors. This salad is very versatile and can be adapted to different diets and preferences. For a vegetarian version, simply omit the feta cheese or substitute it with a vegan cheese. For a vegan version, in addition to the cheese, make sure that the rest of the ingredients are of vegetable origin. You can add other vegetables such as cucumber, red or yellow pepper, or even canned artichokes. To give it a more spicy touch, you can add a pinch of dried oregano or a few leaves of chopped fresh basil. The Mediterranean Orzo salad is perfect to serve as a single dish on a hot day, as a side dish to grilled meats or fish, or as part of a buffet.
