Description

This sheet cake with curd and fruits is a true classic that I always enjoy baking. The loose yeast dough, the creamy curd filling, and the fruity note of cherries and mirabelle plums make it a perfect cake for birthdays or a cozy Sunday brunch. I think the combination of sweet and slightly sour fruits harmonizes wonderfully with the curd. The cake can be prepared well in advance and tastes wonderfully juicy even the next day. If you like, you can also use other fruits, depending on what is in season. An absolute must for all cake lovers!

Ingredients (14 ingredients)

  • 375 g Flour
  • 25 g Yeast
  • 150 ml Milk
  • 175 g Sugar
  • 3 piece Eggs (size M)
  • 2 Stücke Grated zest of untreated lemons
  • 175 g Butter or margarine
  • 1 Pck. Vanilla sugar
  • 1 Pck. Custard powder vanilla flavor
  • 1 tbsp Lemon juice
  • 500 g Low-fat curd
  • 1 Glas Royal cherries (700 ml)
  • 1 Glas Mirabelle plums (with stone) (680 ml)
  • 50 g Almond flakes

Preparation (7 steps)

Prepare yeast dough

Put 375 g flour, 25 g yeast, 150 ml milk, 50 g sugar, 1 egg and the grated zest of 1 lemon in the mixing bowl. Add 50 g soft butter or margarine in flakes and knead for 2 min./kneading stage to a smooth dough.

Let dough rise

Transfer the dough to a bowl, cover and let rise in a warm place for about 30 minutes until the dough volume has doubled. Clean mixing bowl.

Prepare curd mixture

Thermomix® Setting
2 min/Speed 3

Put 125 g butter or margarine, 125 g sugar and 1 pack vanilla sugar in the mixing bowl and stir for 2 min./speed 3 until frothy.

Complete curd mixture

Thermomix® Setting
30 sec/Speed 3

Add the remaining 2 eggs, 1 pack custard powder vanilla flavor, 1 tbsp lemon juice and the remaining grated lemon zest and stir in for 30 sec./speed 3. Add 500 g low-fat curd and stir in for 30 sec./speed 3.

Prepare fruits

Drain 1 jar (700 ml) royal cherries and 1 jar (680 ml) mirabelle plums (with stone). Pit mirabelle plums.

Roll out and cover dough

Knead the dough again and place on a greased baking sheet. With floured hands, spread the dough evenly on the baking sheet. Spread the curd mixture on top, cover with mirabelle plums and cherries. Sprinkle with 50 g almond flakes.

Baking

Bake the cake in a preheated oven (electric oven: 200 °C) for about 30 minutes.
