Description

This citrus coconut cake is an absolute delight! I especially like to bake it in the spring, when the citrus fruits are really juicy. The combination of lemon, lime and shredded coconut makes it incredibly aromatic and juicy. The cake is perfect for Sunday coffee or as a sweet surprise for a birthday. The syrup keeps it nice and moist and it tastes delicious. A tip: If you like, you can add some grated tonka bean to the dough - this gives the cake a special touch. The preparation is a bit more complex, but it's definitely worth it!

Ingredients (9 ingredients)

  • 1 piece untreated lemon
  • 2 piece Limes
  • 125 g soft butter
  • 400 g Sugar
  • 4 piece Eggs (size M)
  • 200 g Flour
  • 1 tsp Baking powder
  • 125 g Shredded coconut
  • 0.125 l Water

Preparation (10 steps)

Grate lemon and lime peels

Wash lemon and limes with hot water, pat dry. Finely grate the peels and set aside.

Squeeze lemons and lime

Squeeze the lemon and 1 lime and set the juice aside.

Mix butter, sugar and citrus zest

Put 125 g soft butter, 200 g sugar and 1 tsp lemon and lime zest each into the mixing bowl and mix for 2 min./speed 4.

Add eggs

Add 4 eggs (size M) individually and stir in for 20 sec./speed 3 each.

Mix flour, baking powder and shredded coconut

Mix 200 g flour, 1 tsp baking powder and 125 g shredded coconut in a separate bowl.

Stir in dry ingredients

Add the flour mixture to the mixing bowl and stir in for 30 sec./speed 3. Use a spatula to loosen everything from the edge.

Pour the dough into the mold

Grease a springform pan (20 cm Ø, approx. 8 cm high) and dust with flour. Pour the dough into the pan and smooth it out.

Prepare syrup

Thermomix® Setting
15 min/212°F/Speed 2 100

Put 1/8 liter water, 200 g sugar, remaining peel and 4 tbsp lime and lemon juice each into the mixing bowl and simmer for 15 min./100°C/speed 2 without a measuring cup until a thick syrup forms.

Bake cake

Bake the cake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 45-50 minutes.

Soak cake with syrup

Let the finished cake cool in the pan for about 10 minutes. Loosen the edge. Prick the cake and spread half of the syrup over it. Let cool. Serve the remaining syrup with the cake.
