Description

This hearty bean stew with pear and bacon is a real soul food for the cold season. The combination of savory bacon, crisp beans and sweet pears is simply unbeatable. I especially like to make this dish in the fall when pears are in season. It is a great main course that warms and satisfies. If you like, you can sprinkle some fresh parsley on top. The stew can also be prepared well in advance and tastes almost even better when reheated!

Ingredients (10 ingredients)

  • 1 piece Onion
  • 300 g smoked belly bacon
  • 500 g green beans
  • 4 piece Pears (firm)
  • 4 Stange(n) Savory
  • 400 g Potatoes
  • 1 tsp Cornstarch
  • 1 piece Lemon
  • to taste Salt
  • to taste Pepper

Preparation (7 steps)

Prepare onion and bacon

Thermomix® Setting

Peel and quarter the onion and put it in the mixing bowl. Cut the belly bacon into coarse cubes and add to the mixing bowl as well. Chop 3 sec./speed 5. Then push everything down with the spatula.

Sauté bacon and onion

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 1.5 l of water to the mixing bowl and simmer for 15 min./100°C/speed 1 without a measuring cup.

Add beans, pears and savory

Thermomix® Setting
25 min/212°F/Speed 1 Linkslauf 100 Reverse

Wash, clean and halve the green beans. Wash, quarter and core the pears. Add the beans, pears and savory sprigs to the mixing bowl and cook for 25 min./100°C/speed 1 reverse rotation without a measuring cup.

Cook potatoes

In the meantime, peel, wash, quarter the potatoes and cook in a separate pot with salted water until done. This can be done in parallel with the cooking process in the Thermomix.

Pour off stew and prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Remove the bacon, beans, pears and savory sprigs from the mixing bowl with the steamer basket and set aside. Catch the broth. Mix the cornstarch in 50 ml of cold water and add to the mixing bowl. Cook 5 min./100°C/speed 2 without a measuring cup.

Season sauce

10 sec/Speed 3

Season the sauce with lemon juice, salt and pepper and stir for 10 sec./speed 3.

Arrange

Cut the bacon into slices. Arrange the stew together with the potatoes on plates and pour sauce over it.
