Description

This cauliflower cream soup is a vegetarian dish that is ideal as a starter or light main course. With the Thermomix® the preparation is quick and easy. The soup is ready in about 30 minutes and is enough for 4 servings. It is creamy, warming and perfect for autumn.

Ingredients (12 ingredients)

  • 400 g Cauliflower
  • 1 tbsp Coconut oil or olive oil
  • 1 piece Onion
  • 1 piece Clove of garlic
  • 1 piece Carrot small
  • 30 g Celery
  • 2 tsp Soy sauce
  • 1 l Water
  • Lovage
  • 2 tbsp White almond butter
  • 2 tsp Salt
  • Pepper

Preparation (7 steps)

Chop onion

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté onion

Add 1 tbsp coconut oil or olive oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and sauté vegetables

Add 1 small carrot and 30g celery finely chopped to the mixing bowl. Cut 400g cauliflower into thumb-sized pieces and add as well. Sauté everything for 5 min./120°C/speed 1.

Deglaze and pour in

Add 2 tsp soy sauce to the mixing bowl and pour in 1 l water.

Season and refine

Add lovage, 2 tsp salt and pepper to taste, and 2 tbsp white almond butter to the mixing bowl.

Let it simmer

Simmer the soup for 15 min./100°C/speed 1.

Purée

Purée the soup until creamy for 30 sec./speed 8-10, increasing the speed slowly.
