Description

This clear soup with white cabbage and carrots is a light and healthy dish, ideal for the autumn season. With the Thermomix® the preparation is quick and easy. The soup is vegetarian and can be prepared well in advance. It is suitable as a starter or light main course and is prepared in about 60 minutes.

Ingredients (11 ingredients)

  • 2 piece Onions
  • 1 piece Garlic cloves
  • 1 bunch Soup vegetables
  • 1 tbsp Rapeseed oil
  • 1 tsp Mustard seeds
  • 2 piece Bay leaves
  • 1.2 l Water
  • 500 g White cabbage
  • 2 Stängel Smooth parsley
  • Salt
  • Pepper

Preparation (7 steps)

Prepare onions, garlic and soup vegetables

Peel 2 onions and 1-2 cloves of garlic. Quarter the onions. Wash, clean and peel 1 bunch of soup vegetables. Cut the carrots into slices as desired or chop roughly together with the remaining vegetables.

Chop and sauté vegetables

Put onion, garlic, leek and 1 tbsp rapeseed oil into the mixing bowl, attach the measuring cup and chop for 5 sec./speed 5. Push down with the spatula and sauté for 3 min./120°C/speed 1.5.

Prepare soup

Add the remaining soup vegetables (except the carrots), attach the measuring cup and chop for 6 sec./speed 5. Now add the sliced carrots. Add 1 tsp mustard seeds, 2 bay leaves and 1.2 l water.

Prepare and steam the white cabbage

8-9 min/100 °C/Speed 2 Linkslauf 212°F Reverse

Clean 500 g white cabbage, remove the hard stalk and chop the leaves roughly. Place in the Varoma and attach. Bring to a boil in 8-9 min./100 °C/speed 2 reverse rotation, then simmer gently for 35 min./85 °C/speed 2 reverse rotation.

Prepare parsley

Wash 2 sprigs of smooth parsley, shake dry and pluck the leaves from the stems.

Finish the soup

Fish the bay leaves out of the soup, add the white cabbage from the Varoma to the soup, stir in with the spatula and season the soup with salt and pepper.

Serve

Divide the soup among four plates and serve garnished with parsley.
