Description

This dish is a wonderful combination of tender salmon, fresh leaf spinach and the fine aromas of Enoki mushrooms. I like to make it when things need to be quick, but I still want something special on the table. The spinach is gently steamed in the Thermomix® and refined with soy sauce, which gives it a slightly Asian touch. The salmon is prepared separately to preserve its juiciness. The Enoki mushrooms give the dish an interesting texture and a mild flavor. A dash of sesame rounds everything off perfectly. Ideal for a light lunch or dinner!

Ingredients (10 ingredients)

  • 600 g Salmon fillet
  • 800 g Leaf spinach
  • 1 piece Onion
  • 1 clove Garlic
  • 2 tbsp Oil
  • 12 tbsp Soy sauce
  • to taste Pepper
  • 2 tbsp Sesame
  • 1 tbsp Butter
  • 100 g Enoki mushrooms

Preparing the ingredients

Wash the salmon, pat dry and cut into 8 pieces. Clean, wash and drain the spinach. Peel and roughly quarter the onion and garlic.

Chop onion and garlic

Put the onion and garlic in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Sauté onion and garlic

Add oil and sauté for 3 min./120°C/level 1.

Steam spinach

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add leaf spinach, 6 tbsp soy sauce and 5 tbsp water and steam for 5 min./100°C/reverse rotation level 1. Season with pepper.

Roast sesame seeds

Roast the sesame seeds in a pan without fat and set aside.

Fry salmon

Fry the salmon in a pan in hot butter for about 3 minutes on each side. Season with 4 tbsp soy sauce and pepper.

Add Enoki mushrooms

Cut off the root piece of the Enoki mushrooms. Mix the mushrooms with half of the roasted sesame seeds under the spinach and season to taste.

Arrange

Arrange spinach with salmon and sprinkle with the remaining sesame seeds. Serve with rice.
