  • 2 große Carrot(s)
  • 7 m.-große Mushrooms
  • 1 große Onion(s)
  • 5 tbsp Milk
  • 0.5 Pck. Herb cream cheese
  • 1 EL, gestr. Vegetable broth powder
  • 2 Garlic clove(s)
  • Salt and pepper
  • Chili powder
  • 3 tbsp Butter
  • 2 tbsp Flour
  • 500 ml Tomatoes, strained
  • 150 ml Sweet cream
  • 1 Paket Lasagna sheet(s)
  • 200 g Cheese, grated

Chop onion and garlic

Peel and quarter the onion. Peel the garlic cloves. Place the onion and garlic in the mixing bowl and chop for 3 sec./level 5. Use the spatula to push everything down from the edge.

Layer lasagna

Place a layer of tomato sauce in a baking dish. Place lasagna sheets on top. Spread a layer of spinach-vegetable mixture on top. Repeat this process until all ingredients are used up. Finish with a layer of tomato sauce.

Sprinkle cheese over and bake

Sprinkle grated cheese over the lasagna and bake in a preheated oven at 180°C top/bottom heat for approx. 20 minutes until the cheese is golden brown.

Lasagna, a classic of Italian cuisine, has found its way into our hearts in countless variations. This spinach-vegetable-lasagna is my personal homage to vegetarian cuisine, inspired by my grandmother's vegetable gardens, where fresh spinach and juicy carrots thrived. The frozen creamed spinach forms the basis of the filling. It brings a creamy texture and a mild, earthy flavor. The carrots provide sweetness and bite, while the mushrooms contribute a hearty, slightly mushroomy note. The onion and garlic form the aromatic foundation, which is further enhanced by the vegetable stock. Chili powder provides a subtle spiciness that wonderfully balances the flavors. Preparation in the Thermomix® makes this dish a breeze. Chopping the vegetables is effortless and even. Be careful not to chop the onion and garlic too finely, as they may burn when sautéing. When sautéing the vegetables, it is important to keep an eye on the temperature to avoid burning. The reverse function when cooking the spinach prevents the ingredients from being chopped. The tomato sauce is made particularly creamy by adding milk and cream. The cream cheese provides an additional flavor dimension and binding. For a vegan version, you can replace the creamed spinach with a vegan alternative and omit the cream cheese or replace it with a cashew cream. Experiment with different spices such as nutmeg, oregano or thyme to give the lasagna a personal touch. Serve the lasagna with a fresh salad and a crispy bread. A glass of dry red wine rounds off the dish perfectly. The lasagna can be prepared well in advance and stored in the refrigerator. It can also be frozen in portions. To reheat, simply heat in the oven or microwave. This way you always have a delicious and healthy dish at hand.
