Description

This fruity lasagna is a real eye-catcher and tastes simply heavenly! The combination of creamy vanilla pudding, fresh peaches and raspberries makes it a special dessert or a light main course. I especially like to make it in the summer when the fruits are in season. The preparation is a bit more complex, but it's definitely worth it! If you like it less sweet, you can reduce the amount of sugar. And if you don't like raspberries, you can simply replace them with other berries. An absolute favorite recipe that is always well received by guests!

Ingredients (11 ingredients)

  • 1 Pck. Pudding powder vanilla flavor (for cooking)
  • 100 g Sugar
  • 500 ml Milk
  • 9 piece Lasagna sheets
  • Salt
  • 850 ml Canned peaches
  • 200 g Low-fat quark
  • 4 piece Eggs (Gr. M)
  • 200 g Frozen raspberries
  • 1 piece Bread roll (from the day before)
  • 1 tbsp Butter

Preparation (10 steps)

Prepare pudding

Thermomix® Setting
8 min/212°F/Speed 2 100

Add 500 ml milk, 100 g sugar and 1 pack of pudding powder vanilla flavor to the mixing bowl and cook for 8 min./100°C/speed 2. Transfer the pudding to a bowl, cover with cling film directly on the surface and let it cool.

Pre-cook lasagna sheets

Bring a pot of water and salt to a boil. Pre-cook the 9 lasagna sheets in it for approx. 5 minutes. Then drain and quench with cold water.

Prepare peaches

Drain the canned peaches (850 ml) and cut into approx. 1 cm thick wedges.

Prepare quark cream

Thermomix® Setting
20 sec/Speed 4

Add 200 g low-fat quark and 4 eggs (Gr. M) to the mixing bowl. Add the cooled vanilla pudding and mix for 20 sec./speed 4.

Layer lasagna

Preheat the oven to 200 °C (top/bottom heat). Grease a casserole dish. Add 3 tbsp quark cream to the bottom of the dish. Cover with 3 lasagna sheets. Layer 1/3 of the quark cream, 1/3 of the frozen raspberries (200 g) and 1/3 of the peach wedges. Similarly layer the remaining quark cream, fruits and lasagna sheets.

Bake lasagna (part 1)

Bake the lasagna in the preheated oven for approx. 30 minutes.

Prepare crumbs

Thermomix® Setting
10 sec/Speed 6

Put 1 bread roll (from the day before) in pieces into the mixing bowl and chop for 10 sec./speed 6. Mix with 50 g sugar and 1 tbsp butter in a bowl.

Spread crumbs on the lasagna

Remove the lasagna from the oven and spread the crumb mixture on top.

Bake lasagna (part 2)

Put the lasagna back into the preheated oven and bake for another approx. 10 minutes until the crumbs are golden brown.

Cool and serve

Remove the lasagna from the oven, let it cool slightly and serve.
