Description

This colorful pepper-zucchini vegetable is a real all-rounder! Quickly prepared and incredibly versatile, it goes perfectly with rice, pasta or simply as a side dish. I love how the sweetness of the peppers harmonizes with the slight spice of the garlic and the green peppercorns. A dash of crème fraîche ensures a creamy consistency. If you like it spicier, you can of course use more ketchup. An ideal dish for the end of the day or as a light lunch!

Ingredients (13 ingredients)

  • 3 piece Bell pepper(s) red, yellow, orange
  • 2 piece Onion(s)
  • 1 clove Garlic clove(s)
  • 1 piece m.-large Zucchini
  • 1 container Crème fraîche or Sour cream
  • 0.13 Liter Vegetable broth
  • 1 etwas Oil (Olive oil), for frying
  • 1 tbsp Tomato paste
  • 1 etwas Pepper black, from the mill
  • 1 evtl. Salt
  • 0.5 cup Ketchup Hot-
  • 1 pinch Sugar
  • 1 tsp Peppercorns green, pickled

Preparation (11 steps)

Prepare peppers

Wash the bell peppers, cut off the stem. Quarter the peppers and remove the white skins. Then cut the peppers into thin strips and set aside.

Prepare onions

Peel the onions, halve them and cut them into half rings. Prepare the onion rings.

Prepare garlic

Peel the garlic clove, cut into fine slices and crush smooth with a little salt on a cutting board. Prepare the crushed garlic.

Prepare zucchini

Wash the zucchini thoroughly, halve (or quarter larger ones) and cut into slices. Prepare the zucchini slices.

Prepare green peppercorns

Chop half of the green peppercorns with a knife - leave the rest whole. Prepare the chopped and whole peppercorns.

Sauté onions

Put some oil in the mixing bowl. Add the onion rings and sauté for 3 Min./120°C/level 1.

Fry peppers

Add the pepper strips to the onions in the mixing bowl and fry for another 5 Min./120°C/level 1. Make sure that roasted flavors develop.

Add zucchini, garlic and tomato paste

Add the zucchini slices, the crushed garlic, the chopped and whole green peppercorns and the tomato paste to the mixing bowl and stir in for 2 Min./120°C/level 1 and let them sweat.

Pour in the vegetable broth and cook

Pour the vegetable broth into the mixing bowl and cook the vegetables for 5 Min./100°C/level 1 until al dente. The vegetables should still have some bite!

Seasoning

Add the ketchup, some pepper from the mill and possibly salt to the mixing bowl and stir in for 1 Min./100°C/level 1 and season.

Add crème fraîche

Thermomix® Setting
30 sec/194°F/Speed 1 90

Add the crème fraîche to the mixing bowl and stir in for 30 Sek./90°C/level 1. The vegetable mixture should have a creamy consistency.
