Description

This spring-like penne with vegetables is a quick and easy dish, ideal for student cuisine. With fresh asparagus, zucchini, peas and cherry tomatoes, it is a healthy and vegetarian meal. Preparation takes only 35 minutes and yields 4 servings. Refined with Parmesan and basil, it is a delicious main course.

  • 300 g Penne
  • 1 piece red Onion
  • 2 Zehen Garlic
  • 1 piece Zucchini
  • 200 g Cherry tomatoes
  • 250 g green Asparagus
  • 100 g Peas - frozen
  • 2 tbsp Olive oil
  • 100 ml Cream
  • 50 g grated Parmesan
  • 3 tbsp Lemon juice
  • 1 tbsp chopped Basil
  • to taste Salt
  • to taste Pepper

Preparation (5 steps)

Chop onion and garlic

Put 1 red onion halved into the mixing bowl and chop for 3 sec./level 5. Add 2 cloves of garlic and chop for 3 sec./level 7.

Prepare vegetables

Cook 300 g Penne according to package instructions, then collect 4 tbsp cooking water. Halve the zucchini lengthwise and cut into slices. Halve 200 g cherry tomatoes. Remove the woody ends from 250 g of green asparagus and quarter the stalks diagonally. Allow 100 g of peas to thaw.

Sauté vegetables

Put 2 tbsp olive oil in the mixing bowl, add onions and garlic and sauté for 3 min./120°C/level 1. Add zucchini and asparagus and sauté for another 5 min./120°C/level 1 with reverse rotation.

Add tomatoes and sauce

Add 200 g halved cherry tomatoes and simmer for 2 min./100°C/level 1 with reverse rotation. Add 100 ml cream, 50 g grated Parmesan, 4 tbsp cooking water and 3 tbsp lemon juice and simmer for 2 min./90°C/level 1 with reverse rotation.

Mix in pasta and peas

1 min/194°F/Gentle stir speed 90 Reverse

Add 300 g cooked penne and 100 g thawed peas and stir in for 1 min./90°C/gentle stir setting with reverse rotation. Season with salt, pepper and 1 tbsp chopped basil.

This dish is a real harbinger of spring for me. I remember how my grandma always got the first fresh ingredients from the market in spring and conjured up simple but incredibly delicious dishes. This penne with vegetables is a tribute to this uncomplicated, seasonal cuisine. The penne itself, with its grooved surface, wonderfully captures the light sauce. The red onion and garlic form the aromatic base, which develops a pleasant sweetness by sautéing in the Thermomix®. The zucchini, sliced, brings a delicate texture and a mild flavor that harmonizes perfectly with the tart cherry tomatoes. The green asparagus, a real spring vegetable, contributes a slightly bitter note and a crunchy bite. The peas, although from the freezer, bring a sweet freshness to the dish. The Thermomix® makes preparation a breeze. Chopping onions and garlic is lightning fast and without tears. Sautéing in the mixing bowl is particularly practical, as the temperature is precisely regulated and nothing burns. When sautéing zucchini and asparagus, pay attention to the reverse rotation so that the vegetables are not crushed. The collected cooking water from the pasta is important for the consistency of the sauce, as it contains starch and binds the sauce. For a vegan version, you can replace the cream with a plant-based alternative, such as cashew cream or soy cuisine. You can replace the Parmesan with nutritional yeast, which gives a similar cheesy taste. Instead of basil, you can also use other fresh herbs such as parsley, chives or oregano. A touch of chili flakes provides a pleasant spiciness. Serve the penne with a fresh salad, e.g. a rocket salad with balsamic dressing. A crispy baguette also goes perfectly with it. The penne with vegetables taste best freshly prepared. Leftovers can be stored in the refrigerator and reheated the next day. However, the vegetables may become a little softer. You can also prepare the vegetables and store them in the refrigerator to shorten the preparation time. However, the pasta should always be cooked fresh.
