Description

These lemon cookies from the Thermomix® are a fine finger food or dessert, ideal for festive occasions and the Christmas season. The main ingredients are flour, butter, lemon, sugar and saffron. With a preparation time of 165 minutes (including 45 minutes of working time), you get about 50 cookies. The recipe is perfect for anyone who enjoys baking and is looking for a special pastry.

Ingredients (10 ingredients)

  • 300 g Flour
  • 1 TL Baking powder
  • 1 Prise Salt
  • 0.1 Döschen ground Saffron
  • 125 g soft Butter
  • 150 g Sugar
  • 1 Stück grated peel of 1 organic Lemon
  • 2 Stück Eggs (size M)
  • 1 EL Lemon juice
  • 125 g Powdered sugar

Preparation (8 steps)

Mix dry ingredients

Put flour, baking powder, salt and saffron in the mixing bowl and mix for 10 sec./level 4.

Stir butter, sugar and lemon zest until creamy

Add soft butter, sugar and grated lemon zest to the mixing bowl and stir for 3 min./level 3 until creamy.

Stir in eggs

Add eggs one at a time and stir in for 20 sec./level 3 each.

Stir in lemon juice and flour mixture

Add lemon juice and the flour mixture and stir in for 30 sec./level 3.

Chill dough

Cover the dough and refrigerate for at least 30 minutes.

Prepare powdered sugar

Sift powdered sugar into a small bowl.

Shape and roll dough

Form the dough into approx. 50 balls with your hands, roll in powdered sugar and chill for approx. 30 minutes. Roll in powdered sugar again.

Bake cookies

Spread the balls on baking sheets lined with baking paper and bake one after the other at 175°C (fan oven: 150°C) for approx. 15 minutes. Remove and let cool.
