I love preparing these lemon salmon scaloppine! They are a light and tasty dish, perfect for a quick dinner or a light lunch. Lemon salmon scaloppine are a dish that takes me back to my childhood, when my grandmother often prepared them during the hot summers by the sea. I still remember the intoxicating scent that spread throughout the house, a mix of fresh lemon and freshly caught salmon. Her version was a little different, made in a pan, but I wanted to adapt it to the Thermomix® to make it even faster and more practical, without sacrificing the authentic taste. The salmon, the undisputed star of this recipe, is a fish rich in Omega-3, essential for our health. Its meat, tender and delicate, goes perfectly with the acidity of the lemon, creating a truly unique balance of flavors. The flour, used in minimal quantities, serves to create a light golden crust that seals the salmon's juices, keeping it soft and juicy inside. The extra virgin olive oil, strictly of high quality, gives a touch of fruity flavor and helps to make the dish even healthier and tastier. Fresh thyme, with its aromatic scent, adds a note of freshness that further enhances the flavor of the salmon. To prepare the lemon scaloppine with the Thermomix®, it is essential to use very fresh and good quality salmon steaks. After lightly flouring them, it is important to heat the oil well in the mixing bowl before adding the salmon, in order to obtain even cooking and a perfect crust. During cooking, it is advisable not to overload the mixing bowl, cooking the steaks in several batches if necessary. When adding the lemon juice and water, it is important to adjust the amount of salt according to your personal taste. A tip: if you want a more intense lemon flavor, you can also add the grated zest of half a lemon at the time of cooking. For a vegetarian or vegan variation, you can replace the salmon with champignon or portobello mushrooms cut into thick slices. In this case, it is advisable to add a little chopped garlic to the oil during the heating phase to intensify the flavor. Lemon salmon scaloppine are perfect served with a side of fresh seasonal vegetables, such as asparagus, courgettes or green beans.
