Description

Classic Austrian Christmas cookies filled with jam.

Ingredients (10 ingredients)

  • 250 g Butter
  • 2 Stück Eggs
  • 400 g Flour
  • 1 TL Baking powder
  • 1 Päckchen Vanilla sugar
  • 1 TL Lemon zest, grated
  • 100 g Sugar
  • 150 g Hazelnuts, ground
  • 200 g Jam (Red currant jelly)
  • Icing sugar

Preparation (8 steps)

Grind sugar and hazelnuts

Put sugar and hazelnuts in the mixing bowl and grind for 15 sec./speed 10.

Transfer ground mixture

Transfer the ground sugar-nut mixture from the mixing bowl and set aside.

Prepare dough

Thermomix® Setting

Add butter, eggs, flour, baking powder, vanilla sugar, lemon zest and the ground sugar-nut mixture to the mixing bowl and knead for 2 min./kneading stage to form a smooth dough.

Chill dough

Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.

Roll out and cut out dough

Roll out the dough on a floured work surface to a thickness of approx. 3 mm and cut out circles with a round cutter (approx. 5 cm diameter). Cut out the middle of half of the circles with a smaller cutter (e.g. in the shape of a heart).

Baking

Place the Linzer eyes on a baking tray lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for approx. 8-10 minutes until they are light golden brown.

Let cool

Let the baked Linzer eyes cool on a wire rack.

Decorate

Spread the whole circles with jam and dust the cut-out circles with icing sugar. Then place the dusted circles on the circles spread with jam.
