Description

These walnut marzipan cookies are a delicious pastry for the winter season and especially popular at Christmas. The combination of walnuts and marzipan provides a fine, nutty flavor. Preparation takes about 3 hours, including cooling time. The recipe yields a larger quantity of cookies, ideal for festive occasions.

Ingredients (12 ingredients)

  • Gostk Marzipan
  • 200 gr Ground walnuts
  • 200 gr Butter soft
  • 200 gr Sugar
  • 2 Stück Eggs
  • 2 EL Rum
  • 2 Beutel Vanilla extract
  • 500 gr Flour
  • 1 Prise Salt
  • Apricot jelly
  • Half walnuts
  • Coating chocolate dark

Preparation (7 steps)

Prepare dough

Add 200g soft butter, 200g sugar, 2 eggs, 2 tablespoons rum and 2 sachets of vanilla extract to the mixing bowl and mix for 30 sec./speed 4.

Add dry ingredients

Add 200g ground walnuts, 500g flour and 1 pinch of salt and knead for 2 min./kneading stage.

Chill dough

Form the dough into a ball and refrigerate for 2 hours.

Shape and bake cookies

Roll out the dough 3-5 mm thick and cut out small coins. Place the coins on a baking tray lined with baking paper and bake in a preheated oven at 170°C for 10-12 minutes.

Prepare marzipan

Roll out the marzipan (knead with powdered sugar beforehand) and cut out coins.

Assemble cookies

Brush both sides of the coins with apricot jelly, place a marzipan coin on top and assemble. Dip the top in apricot jelly and decorate with a half walnut.

Melt chocolate

Put coating chocolate dark in pieces into the mixing bowl and melt for 4 min./50°C/speed 2.
