Description

This revisited Lorraine tart is an absolute delight! I replaced the traditional cheese with smoked buffalo mozzarella and fresh chives, which gives it a unique and irresistible flavor. The crispy shortcrust pastry, the creamy bacon filling and the melting cheese... a real treat for the taste buds. It is perfect for a Sunday brunch, a lunch with friends or even for the end of year celebrations. Easy to prepare and always appreciated, this quiche is a staple in my kitchen. Feel free to vary the cheeses according to your tastes!

Ingredients (11 ingredients)

  • Nutmeg
  • Fine salt
  • Pepper
  • 1 piece smoked buffalo mozzarella
  • Sprig of chives
  • 70 g gruyere
  • 10 cl milk
  • 200 g matchstick bacon
  • 3 piece eggs
  • 20 cl whole liquid cream (30% fat)
  • Shortcrust pastry

Preparation (5 steps)

Preheat the oven

Preheat the oven to 180ºC. This step is done without the Thermomix.

Prepare the shortcrust pastry

Take a tart dish or pastry ring and spread your shortcrust pastry with baking paper underneath. Let the pastry base rest in the fridge for a minimum of 30 minutes. Once the pastry has rested, prick the entire pastry roughly with a fork. This step is done without the Thermomix.

Prepare the filling

In the Thermomix bowl, add the 3 eggs, 20 cl of whole liquid cream, 10 cl of milk, a pinch of salt, pepper and a pinch of nutmeg. Mix 10 Sec./Stufe 4.

Cook the bacon

Fry the 200 g of matchstick bacon in a pan without fat. Once cooked, drain them and put them on absorbent paper to eliminate as much fat as possible. This step is done without the Thermomix.

Assemble and bake the quiche

Put the bacon on the pastry and pour the quiche mixture over it. Distribute a few cubes of smoked buffalo mozzarella, cover with 70 g of grated gruyere and sprigs of chopped fresh chives. Bake for 35-40 minutes.
