Description

With the Thermomix®, the magic crust, a hearty bread or rolls with spelt flour, rye flour, and sourdough powder, is made in no time. Preparation takes a total of 150 minutes, with active working time of about 30 minutes. The recipe from the Bread and Rolls category is ideal for breakfast or finger food. The magic crust is perfect for anyone who loves homemade bread with a crispy crust.

Ingredients (11 ingredients)

  • 380 ml lukewarm water
  • 8 gr Yeast
  • 0.5 TL Sugar
  • 350 g Spelt flour 630
  • 150 g Rye flour 997
  • 1.5 TL Sourdough powder
  • 1 TL Salt
  • 1 TL Baking malt
  • 1.5 TL Caraway seeds
  • 1.5 TL Linseed
  • 3 TL Sunflower seeds

Prepare yeast

Thermomix® Setting

Put 380 ml lukewarm water in the mixing bowl. Add 8 g yeast and 1/2 tsp sugar. Stir for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Put 350 g spelt flour 630, 150 g rye flour 997, 1 1/2 tsp sourdough powder, 1 tsp salt, 1 tsp baking malt, 1-2 tsp caraway seeds, 1-2 tsp linseed and 3 tsp sunflower seeds in the mixing bowl. Knead for 3 min./kneading setting.

Let the dough rise

Let the dough rise for 1 1/2 hours with the lid on and fold several times.

Bake bread

Preheat the oven to 220°C top/bottom heat. Shape the dough into a bread and bake for 1 hour.
