Ingredients (9 ingredients)

  • 1000 g Meat (Beef or Game)
  • 100 ml Soy Sauce
  • 2 EL Honey
  • 2 EL Olive Oil
  • 1 TL Pepper
  • 1 TL Paprika Powder
  • 1 TL Garlic Powder
  • 1 TL Onion Powder
  • 0.5 TL Chili Powder

Preparation (5 steps)

Prepare the meat

Cut the meat (approx. 1 kg) into slices about 0.5 cm thick. Make sure the slices are not too thick, otherwise they will not dry properly.

Prepare the marinade

Put the soy sauce (100 ml), honey (2 tbsp), olive oil (2 tbsp), pepper (1 tsp), paprika powder (1 tsp), garlic powder (1 tsp), onion powder (1 tsp) and chili powder (1/2 tsp) into the mixing bowl.

Marinate the meat

Place the meat slices in a bowl and pour the marinade over them. Make sure all slices are well covered. Cover the bowl and leave to marinate in the refrigerator for at least 2 hours, or preferably overnight.

Dry the meat

Place the meat slices on the racks of the dehydrator. Make sure the slices do not touch each other so that the air can circulate well. Set the dehydrator to 60°C and dry the meat for approx. 12-24 hours. The exact drying time depends on the thickness of the slices and the power of the dehydrator. The meat should feel leathery but no longer moist.
