  • 600 g Pork tenderloin
  • 1 tbsp Mustard
  • 250 g Bacon slices
  • 1 tbsp Clarified butter
  • 200 g Cream cheese with herbs
  • 2 tbsp Tomato paste
  • 250 g Cream
  • 1 tbsp Herbs of Provence
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Prepare pork tenderloin

Preheat the oven to 180 degrees Celsius circulating air. Remove fat and tendons from the pork tenderloin and cut into medallions about 2 cm thick. Season the medallions with salt and pepper and spread mustard on both sides.

Wrap medallions

Wrap each medallion with a slice of bacon and set aside.

Fry medallions

Heat the clarified butter in a pan and fry the medallions in it for about 1 minute per side. Then place the fried medallions in a casserole dish.

Prepare sauce

Put cream cheese, tomato paste, cream, herbs of Provence, salt and pepper into the mixing bowl and stir for 20 sec./speed 3.

Pour sauce over the meat

Pour the prepared sauce evenly over the medallions in the casserole dish.

Place the casserole dish in the preheated oven and bake the medallions for about 20 minutes until the bacon is crispy and the meat is cooked.
